Saturday Night Omelet




5 eggs

2/3 cup diluted evaporated milk

3/4 tsp salt

Dash liquid hot pepper seasoning

1 envelope (4 serving size) instant whipped potatoes

4 tbsp butter or margarine

1 medium onion, finely chopped

1/2 cup boiled ham strips 1/4 inch wide

1 cup grated American cheese



In large bowl, with mixer, beat eggs until foamy

Then beat in milk, salt, and hot pepper seasoning



With slotted spoon, stir in potatoes

Heat 2 tbsp butter in large skillet with heat resistant handle

Sauté onion and ham until onion is translucent

Then stir onion and ham into egg mixture



Heat remaining butter in same skillet

Pour in egg mixture, and cook carefully, over medium heat, until bottom of omelet is nicely browned about 12 minutes



Sprinkle half of omelet with 1/2 cup cheese

Fold omelet, and sprinkle remaining cheese on top

Run under broiler 2 to 3 minutes, or until cheese melts

Watch carefully do not burn

Makes 4 servings
