| Saturday Night Omelet 5 eggs2/3 cup diluted evaporated milk3/4 tsp saltDash liquid hot pepper seasoning1 envelope (4 serving size) instant whipped potatoes4 tbsp butter or margarine1 medium onion, finely chopped1/2 cup boiled ham strips 1/4 inch wide1 cup grated American cheese In large bowl, with mixer, beat eggs until foamyThen beat in milk, salt, and hot pepper seasoning With slotted spoon, stir in potatoesHeat 2 tbsp butter in large skillet with heat resistant handleSauté onion and ham until onion is translucentThen stir onion and ham into egg mixture Heat remaining butter in same skilletPour in egg mixture, and cook carefully, over medium heat, until bottom of omelet is nicely browned about 12 minutes Sprinkle half of omelet with 1/2 cup cheeseFold omelet, and sprinkle remaining cheese on topRun under broiler 2 to 3 minutes, or until cheese meltsWatch carefully do not burnMakes 4 servings | |
