Cheese topped Salmon Patties




1 (15oz) can salmon, drained and flaked

1 cup prepared mashed potatoes

1/4 cup diced green pepper

1/4 cup diced onion

1 egg

3 tbsp butter

6 slices Monterey Jack cheese



Combine salmon, mashed potatoes, green pepper, onion and egg form into 6 patties.

Pan Fry patties in butter and top with cheese

Sauté until cheese melts

Serves 6

Lemon & Smoked Salmon Sandwiches




Makes 16 to 20 sandwiches (cut into quarters)



2 unwaxed lemons

8 to 10 thin slices of brown bread

Unsalted butter, softened

7oz smoked salmon



Remove the rind and white pith from the lemons then cut the flesh into very thin slices, removing pips

Pat dry on kitchen paper



Spread one side of bread with butter, strew with salmon, season with pepper then top with lemon



Top with the remaining bread and cut into dainty sandwiches

Salmon and Egg Pie




2 (8 oz) cans refrigerated crescent dinner rolls

1/2 cup sliced green onions

1/4 cup margarine

1/3 cup flour

1 cup milk

2 tbsp capers

1/2 tsp dill weeds

15-1/2 oz can salmon, rinsed, drained, flaked

3 eggs, hard cooked, sliced



Heat oven to 375f

Separate 1 can of dough into 8 triangles

Place triangles in ungreased 9 inch pie pan

Press over bottom and up sides to form crust.

Bake at 375 for 7 minutes



In small saucepan, sauté onions in margarine until tender

Stir in flour

Cook until mixture is smooth and bubbly

Gradually add milk, cook until mixture boils and thickens, stirring constantly

Remove from heat, stir in capers and dill weed

Spoon salmon over partially baked crust

Layer egg slices over salmon

Spoon sauce over egg layer



Separate remaining can of dough into 8 triangles

Starting at shortest side of triangle, roll halfway up

Arrange on top of sauce with tips toward center

Do not overlap tips

If desired, brush with beaten egg

Bake at 375 for 20 to 30 minutes or until golden brown

Garnish as desired

Salmon Cakes




1 (7-1/2oz) can salmon, drained and flaked

1/3 cup saltine cracker crumbs

1 slightly beaten egg

2 tbsp chopped onion

2 tbsp milk

1 tbsp lemon juice

2 tbsp butter or margarine



Combine all ingredients except butter, blending well

Shape into 4 flat patties

Melt butter or margarine in small skillet

Sauté patties on both sides until golden brown and heated through

Add more butter to skillet, if necessary

Serve topped with White Sauce and Peas

Serves 2-4



White Sauce and Peas



2 tbsp butter or margarine

1-1/2 tbsp flour

1/2 tsp salt

1 cup milk

1 (10oz) pkg frozen peas, cooked and drained or 1 cup canned peas, drained



Melt butter in saucepan, blend in flour and salt

Add milk, stir and cook until thick and bubbly

Add peas to hot mixture, heat through

Makes 2 cups

Salmon Biscuit Pie




1 can (1lb) mixed vegetables

1 can (1lb) salmon, drained

3 bacon slices, diced

1/4 cup chopped onion

3 tbsp flour

1/4 tsp salt

1/8 tsp pepper

Milk



Biscuit Topping

1/3 cup milk

1 cup pkg biscuit mix



Preheat oven to 450F

Drain vegetables, reserving liquid



In 1-1/2 quart casserole, combine vegetables and salmon

Sauté bacon until crisp

Drain, reserving 3 tbsp drippings

Add bacon to salmon mixture toss gently

In reserved drippings in saucepan sauté onion until tender several minutes

Remove from heat, stir in flour, salt, and pepper

Add enough milk to reserved vegetable liquid to measure 1-1/2 cups

Gradually stir into flour mixture

Bring to boiling, stirring

Reduce heat, and simmer 1 minute

Pour sauce over salmon mixture in casserole

Bake 15 minutes, or until hot and bubbly

Meanwhile,



Make Biscuit Topping

Pour milk into biscuit mix, stirring with fork just until combined

Spoon onto hot mixture in casserole

Bake 15 minutes longer, or until biscuits are golden and baked through

Makes 4 to 6 servings

Stuffed Salmon




2 salmon steaks (about 1-1/2 lb)

1/2 tsp salt

1/8 tsp pepper

1/4 cup butter or margarine

1/4 cup finely chopped celery

1 tsp chopped onion

1-1/2 cups fresh white bread cubes

2 tbsp chopped parsley

2 tsp pickle relish, drained

1 tsp bottled capers, drained

1/4 cup evaporated milk, undiluted

Lemon wedges



Preheat oven to 350F

Lightly grease an 8x8x2 pan

Wipe salmon with damp paper towels sprinkle both sides with salt and pepper

In 2 tbsp hot butter in small saucepan

Sauté celery and onion until tender about 5 minutes

Remove from heat

Add bread cubes, parsley, pickle relish, capers, and milk, toss lightly to mix well

Place one salmon steak in prepared pan

Arrange stuffing on salmon top with second salmon steak

Secure with 4 skewers

Dot top with remaining butter pour 1/2 cup water around salmon

Bake uncovered, about 1 hour or until fish flakes easily with fork baste frequently with pan liquid

Garnish with more parsley, if desired, and lemon

Cut crosswise through stuffing

Makes 2 servings
