| Lemon & Smoked Salmon Sandwiches Makes 16 to 20 sandwiches (cut into quarters) 2 unwaxed lemons8 to 10 thin slices of brown breadUnsalted butter, softened7oz smoked salmon Remove the rind and white pith from the lemons then cut the flesh into very thin slices, removing pipsPat dry on kitchen paper Spread one side of bread with butter, strew with salmon, season with pepper then top with lemon Top with the remaining bread and cut into dainty sandwiches | |

| Salmon and Egg Pie 2 (8 oz) cans refrigerated crescent dinner rolls1/2 cup sliced green onions1/4 cup margarine1/3 cup flour1 cup milk2 tbsp capers1/2 tsp dill weeds15-1/2 oz can salmon, rinsed, drained, flaked3 eggs, hard cooked, sliced Heat oven to 375fSeparate 1 can of dough into 8 trianglesPlace triangles in ungreased 9 inch pie panPress over bottom and up sides to form crust. Bake at 375 for 7 minutes In small saucepan, sauté onions in margarine until tenderStir in flourCook until mixture is smooth and bubblyGradually add milk, cook until mixture boils and thickens, stirring constantlyRemove from heat, stir in capers and dill weedSpoon salmon over partially baked crustLayer egg slices over salmonSpoon sauce over egg layer Separate remaining can of dough into 8 trianglesStarting at shortest side of triangle, roll halfway upArrange on top of sauce with tips toward centerDo not overlap tipsIf desired, brush with beaten eggBake at 375 for 20 to 30 minutes or until golden brownGarnish as desired8 servings | |
