Crab Mushroom Lasagna




1 lb cooked crabmeat

8oz lasagna noodles, cooked



Mushroom Sauce

3 tbsp butter

4 cloves garlic, minced

1 large onion, chopped

1 lb sliced mushrooms

1 can (16oz) whole tomatoes, with juices, chopped

1/2 cup dry white wine

1/2 cup chopped basil

2 tsp fennel seeds

1 tsp each salt and pepper

1 cup whipping cream

1lb cooked medium shrimp, peeled



Filling

1 carton (15oz) Ricotta cheese

1 pkg (8oz) cream cheese

2 eggs

1 pkg (10oz) chopped spinach, cooked, well drained

1 red bell pepper, seeded, cored, diced

1 cup green onions, thinly sliced

1 tsp salt and pepper

1/2 cup chopped basil

1 lb mozzarella cheese, thinly sliced



Pick over crabmeat and shred



For Sauce

Heat butter in a large skillet over medium high heat

Add garlic, onion and mushrooms, Sauté 5 minutes



Add tomatoes (with juices) and cook 5 minutes

Add the wine, basil, fennel, salt and pepper

Simmer, uncovered for 10 minutes, stirring occasionally



Add the cream and shrimp

Simmer 5 minutes. Remove from heat



For Filling

Mix the ricotta, cream cheese, eggs, spinach, pepper, onions, basil, slat, pepper and crab



Butter a 3 qt lasagna pan

Spread a small amount of sauce on the bottom

Cover with half the noodles

Top with half the filling

Half the remaining mushroom shrimp sauce and half the mozzarella



Top with remaining noodles, filling, and sauce

Top with remaining mozzarella



Bake at 350F until browned, about 50 minutes.

Crab Casserole




3/4 lb cooked fresh crabmeat or 2 cans (6oz each) crabmeat

2 tbsp butter

1 small green bell pepper, seeded, diced

1 small red bell pepper, seeded, diced

1 cup thinly sliced celery

1 cup half and half

1 tbsp all purpose flour

1 tbsp fresh lemon juice

Salt and freshly ground pepper, to taste

2 tbsp cracker crumbs

1/2 cup toasted, slivered almonds

1/4 cup shredded cheddar cheese



Shred and pick over crabmeat, set aside

Heat butter in skillet

Add green and red peppers and celery

Sauté 4 to 5 minutes or until tender-crisp

Remove from heat



Mix half and half and flour

Add to skillet

Cook, stirring constantly, until thickened

Add the crabmeat, lemon juice, salt and freshly ground pepper to taste



Pour into buttered 1 qt casserole

Sprinkle with crumbs, almonds and shredded cheese



Bake at 350 for 15 minutes or until bubbling hot

If refrigerated before baking, increase baking time to 25 to 30 minutes

Crab Stuffed Potatoes




4 medium baking potatoes

1/4 cup butter

1/4 to 1/3 cup half and half cream

1 tsp salt

1/4 tsp pepper

1 cup (4oz) shredded cheddar cheese

1/4 cup finely chopped green onions or chives

1 can (6-1/2 oz) crabmeat, drained, flaked and cartilage removed or 1 pkg (8oz) imitation crabmeat, chopped

Paprika



Bake potatoes at 425 for 45 to 55 minutes or until tender

When cool enough to handle, halve potatoes lengthwise

Carefully scoop out pulp into a bowl, leaving a thin shell

Set shells aside

Beat or mash potatoes with butter, cream, salt and pepper until smooth

Using a fork, stir in cheese and onions

Gently mix in crab

Stuff shells

Sprinkle with paprika

Return to the oven for 15 minutes or until heated through

Yield 8 servings

Deviled Crab Casserole




1 can (6oz) crabmeat, drained, flaked and cartilage removed

1 cup dry bread crumbs, divided

3/4 cup milk

1/4 cup chopped green onions

2 hard cooked eggs, chopped

1/2 tsp salt

1/4 tsp Worcestershire sauce

1/8 tsp ground mustard

1/8 tsp pepper

6 tbsp butter, melted, divided

Paprika



In a bowl, combine crab, 3/4 cup of bread crumbs, milk, onions, eggs, salt, Worcestershire sauce, mustard and pepper

Add 4 tbsp of butter, mix well



Spoon into a greased 1 quart baking dish

Combine remaining bread crumbs and butter, sprinkle over casserole

Sprinkle with paprika

Bake uncovered at 425 for 16 to 18 minutes or until golden brown and edges are bubbly

Yield 2 servings

Maryland Crab Cakes




Crab Cakes



3/4 mayonnaise

1/2 cup Japanese bread crumbs

2 eggs

1 tbsp Dijon mustard

1 tbsp finely chopped Italian parsley

2 tsp baking powder

1 tsp crab boil seasoning

1 tsp Worcestershire sauce

Juice from 1/2 lemon

2 lbs jumbo crab meat



Rebel Sauce



1/2 cup orange marmalade

2 tbls orange juice

1 tbsp fresh lemon juice

1-1/2 tsp horseradish

1/4 tsp dry mustard

1/8 tsp ginger



Preheat oven to 350 degrees

For crab cakes, combine mayonnaise, bread crumbs, eggs, Dijon mustard, parsley, baking powder, seasoning, Worcestershire sauce and fresh lemon juice.

Add crab meat and toss gently

Form into 4 oz patties and bake 11 minutes



For rebel Sauce

Blend marmalade, orange juice, lemon juice, horseradish, dry mustard and ginger

Heat in saucepan

Serve with crab cakes

Makes 3/4 cup

Serves 8
