| Crab Mushroom Lasagna 1 lb cooked crabmeat8oz lasagna noodles, cooked Mushroom Sauce3 tbsp butter4 cloves garlic, minced1 large onion, chopped1 lb sliced mushrooms1 can (16oz) whole tomatoes, with juices, chopped1/2 cup dry white wine1/2 cup chopped basil2 tsp fennel seeds1 tsp each salt and pepper1 cup whipping cream1lb cooked medium shrimp, peeled Filling1 carton (15oz) Ricotta cheese1 pkg (8oz) cream cheese2 eggs1 pkg (10oz) chopped spinach, cooked, well drained1 red bell pepper, seeded, cored, diced1 cup green onions, thinly sliced1 tsp salt and pepper1/2 cup chopped basil1 lb mozzarella cheese, thinly sliced Pick over crabmeat and shred For SauceHeat butter in a large skillet over medium high heatAdd garlic, onion and mushrooms, Sauté 5 minutes Add tomatoes (with juices) and cook 5 minutesAdd the wine, basil, fennel, salt and pepperSimmer, uncovered for 10 minutes, stirring occasionally Add the cream and shrimpSimmer 5 minutes. Remove from heat For FillingMix the ricotta, cream cheese, eggs, spinach, pepper, onions, basil, slat, pepper and crab Butter a 3 qt lasagna panSpread a small amount of sauce on the bottomCover with half the noodlesTop with half the fillingHalf the remaining mushroom shrimp sauce and half the mozzarella Top with remaining noodles, filling, and sauceTop with remaining mozzarella Bake at 350F until browned, about 50 minutes. | |

| Crab Casserole 3/4 lb cooked fresh crabmeat or 2 cans (6oz each) crabmeat2 tbsp butter1 small green bell pepper, seeded, diced1 small red bell pepper, seeded, diced1 cup thinly sliced celery1 cup half and half1 tbsp all purpose flour1 tbsp fresh lemon juiceSalt and freshly ground pepper, to taste2 tbsp cracker crumbs1/2 cup toasted, slivered almonds1/4 cup shredded cheddar cheese Shred and pick over crabmeat, set asideHeat butter in skilletAdd green and red peppers and celerySauté 4 to 5 minutes or until tender-crispRemove from heat Mix half and half and flourAdd to skilletCook, stirring constantly, until thickenedAdd the crabmeat, lemon juice, salt and freshly ground pepper to taste Pour into buttered 1 qt casseroleSprinkle with crumbs, almonds and shredded cheese Bake at 350 for 15 minutes or until bubbling hotIf refrigerated before baking, increase baking time to 25 to 30 minutes | |

| Crab Stuffed Potatoes 4 medium baking potatoes1/4 cup butter1/4 to 1/3 cup half and half cream1 tsp salt1/4 tsp pepper1 cup (4oz) shredded cheddar cheese1/4 cup finely chopped green onions or chives1 can (6-1/2 oz) crabmeat, drained, flaked and cartilage removed or 1 pkg (8oz) imitation crabmeat, choppedPaprika Bake potatoes at 425 for 45 to 55 minutes or until tenderWhen cool enough to handle, halve potatoes lengthwiseCarefully scoop out pulp into a bowl, leaving a thin shellSet shells asideBeat or mash potatoes with butter, cream, salt and pepper until smoothUsing a fork, stir in cheese and onionsGently mix in crabStuff shellsSprinkle with paprikaReturn to the oven for 15 minutes or until heated throughYield 8 servings | |

| Deviled Crab Casserole 1 can (6oz) crabmeat, drained, flaked and cartilage removed1 cup dry bread crumbs, divided3/4 cup milk1/4 cup chopped green onions2 hard cooked eggs, chopped1/2 tsp salt1/4 tsp Worcestershire sauce1/8 tsp ground mustard1/8 tsp pepper6 tbsp butter, melted, dividedPaprika In a bowl, combine crab, 3/4 cup of bread crumbs, milk, onions, eggs, salt, Worcestershire sauce, mustard and pepperAdd 4 tbsp of butter, mix well Spoon into a greased 1 quart baking dishCombine remaining bread crumbs and butter, sprinkle over casseroleSprinkle with paprikaBake uncovered at 425 for 16 to 18 minutes or until golden brown and edges are bubbly Yield 2 servings | |
