Cranberry Sherbet




2 cups fresh cranberries

1 tsp unflavored gelatin

2 tbsp lemon juice

1 cup orange juice

1-1/2 cups sugar

2 egg whites



Wash cranberries, removing stems

Turn into 2-1/2 quart saucepan

Add 1-1/2 cups water, simmer, covered, 10 minutes

Meanwhile, sprinkle gelatin over 2 tbsps cold water in medium bowl, let stand 5 minutes

Stir in lemon juice, orange juice, and sugar

Then press cranberries and liquid through a sieve, to remove skins and seeds

Add to gelatin mixture, stirring until gelatin and sugar are dissolved

Pour into ice cube tray, freeze just until mushy about 1 hour

Then beat egg whites, in small bowl of electric mixer at high speed, just until soft peaks form

Turn cranberry mixture into large bowl of electric mixer, beat, at medium speed, until smooth

With rubber scraper, gently fold egg whites into cranberry mixture until combined

Turn into 2 ice cube trays freeze until firm about 2 hours

Turn into large electric mixer bowl, beat, at medium speed, until thick and smooth

Return to ice cube trays, freeze again until firm about 30 minutes

Makes 6 to 8 servings

Fresh Grapefruit Sherbet




2 Cups sugar

1 cup water

2 egg whites

2 tablespoons sugar

1 tablespoon freshly grated grapefruit peel

1-3/4 cups freshly squeezed grapefruit juice

1/4 cup freshly squeezed lemon juice



Boil 2 cups sugar and water together for 5 minutes. Cool slightly.

Meanwhile, in large mixer bowl, beat egg whites to soft peak stage;

Gradually add 2 tablespoons sugar and beat until whites form stiff peaks.

Continue beating while adding hot syrup in a thin steady stream

Gradually beat in grapefruit peel, Grapefruit and lemon juice.

Pour into shallow pan or ice cube trays;

Freeze until very slushy but not completely firm.

Turn into chilled bowl;

Beat with electric mixer or rotary beater until very smooth and fluffy.

Return to trays and freeze until firm

Makes about 1-1/2 quarts or 10 servings

Milk Sherbet


1 regular size package Jell-O Orange or Grape Gelatin

Dash of salt

1/2 cup sugar

1 cup boiling water

2 cups milk



Dissolve Jell-O, salt, and sugar in boiling water

Chill until Jell-O is cold and syrupy

Add milk gradually, stirring constantly

Pour into freezing tray of refrigerator and freeze until mixture is frozen about 1/2 inch around edge

Beat with egg beater until fluffy

Return to tray and freeze until firm, 4-1/2 to 5 hours

Makes 1-1/2 pints sherbet.

Orange Sherbet




Cook

1 cup sugar and

1 cup water for 15 minutes

Soak 1 teaspoon gelatin in 1/2 cup cold water 5 minutes

Then add to hot syrup

Cool and add

1 cup orange juice and 1/2 cup lemon juice

Freeze to mush and then fold in the stiffly beaten white of 1 egg

Return to inset pan and complete the freezing

Stirring once or twice during freezing improves texture
