Divinity Parfait




3 egg whites

1 tsp vanilla

1/2 cup water

1 cup heavy cream

1/4 lb marshmallows

1 cup sugar

1/2 cup nutmeats chopped fine



Cook sugar and water together in saucepan until it spins a thread, then pour over the stiffly beaten egg whites

Beat until light and fluffy

Fold in the melted marshmallows, then add the vanilla, nuts, candied fruit (if desired) and finally fold in the cream that has been whipped

Turn into inset pan of refrigerator

Let stand 3 to 4 hours or until firm

Slice and serve

Do not freeze till hard.

Maple Parfait




Beat 4 eggs slightly and pour into 1 cup hot maple syrup,

Cook slowly in top of double boiler until mixture thickens, cool,

And add 1 pint heavy cream which has been beaten until stiff

Pour into inset trays of electric refrigerator, or pack in salt and ice and allow to remain 3 to 4 hours or until frozen.

Pear Parfaits




1/4 cup sugar

Dash of Salt

2 tbsp cornstarch

1 tbsp grated orange rind

1 cup orange juice

1 tbsp lemon juice

1 can (1lb) sliced pears, chilled

1 quart vanilla ice cream

Chocolate sprinkles

1/2 cup heavy cream, whipped and sweetened



Mix first 3 ingredients in saucepan

Add next 3 ingredients and 1/2 cup syrup drained from pears

Mix well; bring to boil and cook, stirring, until clear and thickened

Remove from heat, cool, then chill

To serve, put a scoop of ice cream in half pint glass

Add one sixth of pear slices and 1/4 cup orange sauce

Top with another scoop of ice cream, chocolate sprinkles and spoonfuls of whipped cream

Makes 6 servings

Note pkged whipped topping can be substituted for the whipped cream

Patrician Parfait




1 pkg (6oz) semisweet chocolate pieces

1 tbsp butter or margarine

1/4 cup light corn syrup

1/4 cup milk

2 tbsp brandy

1 Quart vanilla ice cream

1-1/2 cups drained brandied cherries



Melt chocolate and butter on top of double boiler, over hot, not boiling water

Gradually stir in corn syrup and milk, beating until smooth

Stir in brandy

Place 1 tbsp chocolate mixture in bottom of each of 6 parfait glasses

Fill glasses with one third of ice cream

Top with 4 to 5 cherries halves

Repeat layering twice

Serve at once

Makes 6 servings



To make brandied cherries

Combine 1-1/2 cups drained maraschino or pitted Bing cherries, halved, with 1/4 cup brandy

Let stand several hours, or overnight
