| Divinity Parfait 3 egg whites1 tsp vanilla1/2 cup water1 cup heavy cream1/4 lb marshmallows1 cup sugar1/2 cup nutmeats chopped fine Cook sugar and water together in saucepan until it spins a thread, then pour over the stiffly beaten egg whitesBeat until light and fluffyFold in the melted marshmallows, then add the vanilla, nuts, candied fruit (if desired) and finally fold in the cream that has been whippedTurn into inset pan of refrigeratorLet stand 3 to 4 hours or until firmSlice and serveDo not freeze till hard. | |

| Pear Parfaits 1/4 cup sugarDash of Salt2 tbsp cornstarch1 tbsp grated orange rind1 cup orange juice1 tbsp lemon juice1 can (1lb) sliced pears, chilled1 quart vanilla ice creamChocolate sprinkles1/2 cup heavy cream, whipped and sweetened Mix first 3 ingredients in saucepanAdd next 3 ingredients and 1/2 cup syrup drained from pearsMix well; bring to boil and cook, stirring, until clear and thickenedRemove from heat, cool, then chillTo serve, put a scoop of ice cream in half pint glassAdd one sixth of pear slices and 1/4 cup orange sauceTop with another scoop of ice cream, chocolate sprinkles and spoonfuls of whipped creamMakes 6 servingsNote pkged whipped topping can be substituted for the whipped cream | |

| Patrician Parfait 1 pkg (6oz) semisweet chocolate pieces1 tbsp butter or margarine1/4 cup light corn syrup1/4 cup milk2 tbsp brandy1 Quart vanilla ice cream1-1/2 cups drained brandied cherries Melt chocolate and butter on top of double boiler, over hot, not boiling waterGradually stir in corn syrup and milk, beating until smoothStir in brandyPlace 1 tbsp chocolate mixture in bottom of each of 6 parfait glassesFill glasses with one third of ice creamTop with 4 to 5 cherries halvesRepeat layering twiceServe at onceMakes 6 servings To make brandied cherriesCombine 1-1/2 cups drained maraschino or pitted Bing cherries, halved, with 1/4 cup brandyLet stand several hours, or overnight | |
