| Frozen Lemon Dessert 4 eggs, separated2/3 cup sugar1/4 cup lemon juice1 tbsp grated lemon peel1/8 tsp salt1 cup whipping cream, whipped3/4 cup crushed vanilla wafers Beat egg yolks till very thick and light, gradually beat in sugarBeating well after each additionAdd lemon juice, lemon peel and salt, blend wellCook in double boiler over hot water, stirring constantly, till thickRemove from heat, coolBeat egg whites until stiff peaks form, fold into thickened mixtureFold in whipped creamSpread half the crumbs in bottom of freezer tray or 10x6x1-1/2 inch baking dishSpoon in lemon mixture, top with reserved crumbsFreeze till firm, several hours or overnightServes 6-8 | |
