Frozen Sherbet Fruit Cups




1 (6oz) pkg or 2 (3oz) pkgs raspberry flavor gelatin

2 cups hot water

1 pint raspberry flavored milk sherbet

1 (3oz) pkg lime flavor gelatin

1 cup hot water

1 cup cold fruit juice

1 (13-1/2 oz) can pineapple tidbits, drained

Greens



Dissolve raspberry gelatin in hot water

Add sherbet, stir until melted

(May be necessary to heat slightly)

Pour into 2 quart mold, freeze

The day you serve the salad, dissolve lime gelatin in hot water add juice and tidbits

Pour over frozen layer, refrigerate

(Will set in about 30 minutes)

Unmold on greens Makes 8 to 12 servings



You can freeze the sherbet mixture in paper liners in muffin-pan cups

When frozen, empty into plastic bags and store in freezer

Serve as dessert with a fluff of whipped cream



Variations



Lime Lemon-Orange

Combine lime gelatin and lemon sherbet

Use orange gelatin for second layer, adding 1 cup fresh or 1 can mandarin orange sections, drained



Lime-Lime

Combine lime gelatin and lime sherbet use lime gelatin for second layer, adding 1 cup fresh or canned grapefruit sections, drained
