Choco-Mint Cream Rice

1 tbsp (1 envelope) unflavored gelatin

1/4 cup sugar

1/8 tsp salt

1 pkg (6oz) semi sweet choco-chips

2 egg yolks

1-1/4 cups milk

2 cup cooked rice

1/2 cup heavy cream

2 egg whites

2 tbs sugar

1/3 cup mint jelly

1/2 cup heavy cream

1 tbsp mint jelly

Gelatin, sugar, salt, and choco in double boiler

Beat egg yolks slightly with milk,

Stir in gelatin mixture

Cook stir constantly till slightly thickened

Remove

Stir in Rice

Chill till cold

Beat heavy cream and egg whites

Chill mixture till set

Spoon into sherbet glasses

Whip 1/2 cup heavy cream, beat 1 tbsp Mint Jelly

Spoon over pudding

Top with additional Mint Jelly if desired
