| Creamy Zucchini Soup 4 to 5 green onions4 small zucchini4 stalks celery2 cloves garlic, minced2 tbsp butter or margarine2 tbsp all purpose flour1 can (10-1/2oz) chicken broth1-1/2 cups half and half1/2 tsp paprikaDash of salt or to taste4 tbsp finely chopped parsley Rinse onionsCut into thin slicesRinse zucchini and celeryPeel celery if toughCut into thin stripsSlice zucchini In a large saucepan, melt butter Add green onion, celery and garlicSauté for a few minutesAdd zucchiniCook, stirring gently, for about 5 minutes Sprinkle with flourStir to blendAdd chicken broth and half and half, a little at a time, until slightly thickenedSimmer soup over low heat for another 5 to 7 minutes Season to taste with thyme and paprikaAdd salt, if needed Ladle soup into soup bowlsSprinkle with chopped parsleyServe immediately | |
