| Borsch 1 can (1 lb) julienne beets1/3 cup finely chopped onions1 can (10-1/2oz) condensed beef bouillon, undiluted1 tsp salt2 tbsp sugar1/4 cup lemon juice2 eggs1/2 cup dairy sour creamFresh dill (optional)In medium saucepan, combine beets and liquid, onion, bouillon, salt, sugar, and lemon juice with 2 cups waterOver medium heat, bring mixture to boiling coveredReduce heat, simmer 5 minutesIn small bowl whisk together eggs and gradually pour 1/2 cup hot beet liquid over eggs, continuing to whiskReturn to beet mixture to saucepanStir quickly, to combine smoothlyServe at once in warm bowls (do not reheat, mixture might curdle)Top each serving with a heaping tbsp sour creamSprinkle with snipped fresh dill, if desiredMakes 6 servingsNote Borsch may also be served chilled | |
