Slow Cooker Chicken And Stuffing


1 package Chicken flavored stuffing mix (6 oz)

½ cup water

2 ½ cups chopped cooked chicken breast

2 medium zucchini (about 1 lb total) cut into ½ inch pieces

8 oz mushrooms, sliced

1 green bell pepper, chopped

1 onion chopped

1 can reduced fat condensed cream of chicken soup (10 ¾ oz)



In a large bowl toss together the stuffing mix, flavor packet (if included with the stuffing), and water, the stuffing will not be completely moistened.

Set aside

In large bowl, combine the chicken, zucchini, mushrooms, pepper, and onion

Stir in the soup

Place half in the slow cooker

Top with half of the stuffing

Repeat the layers with the remaining soup and stuffing

Cover and cook on the low heat setting for 5 to 6 hours or on the high heat setting for 2 ½ to 3 hours, or until the vegetables are tender and the flavors are blended

Makes 6 servings

Per serving 261 calories

DOUBLE CHOCOLATE ZUCCHINI BREAD


1 1/2 CUP SUGAR
2 T. VANILLA
2 1/2 CUPS FLOUR
1/4 CUP OF UNSWEETENED COCOA
2 CUPS SQUASH
1 CUP WALNUTS
1 CUP MARGERINE
2 EGGS
1/2 CUP SOUR CREAM
1 t. BAKING SODA
6 oz. CHOCOLATE CHIPS

Grease and flour a 13x9 pan. In large bowl, with mixer at low speed, beat sugar, margarine, vanilla and eggs till blended. Increase speed to high, beat till light and fluffy, about 5 min. Reduce speed to low, and add flour, sour cream, cocoa, baking soda, Beat till blended, constantly scraping bowl. Fold in squash and chocolate chips, and nuts. Batter will be thick. Bake at 350 oven for 40-45 min. Dust with confectionery sugar

Cheesy Zucchini Lasagna

2 cups shredded fat-free or part skim mozzarella cheese (8 oz)
2 cups shredded zucchini (about 2 medium)
1 cup nonfat or low fat ricotta cheese
¼ cup grated parmesan cheese
2 ¾ cups meatless spaghetti sauce
9 uncooked lasagna noodles
Heat oven to 350
Reserve ½ cup of the mozzarella cheese. Mix remaining mozzarella cheese, the zucchini, ricotta cheese and parmesan cheese. Spread ¾ cup of the spaghetti sauce in un-greased rectangular baking dish, top with 3 of the noodles. Spread half of the cheese mixture over noodles in dish, top with ¾ cup of the spaghetti sauce. Repeat with 3 noodles, remaining cheese mixture and ¾ cup of the spaghetti sauce. Top with remaining noodles and spaghetti sauce
Cover with aluminum foil and bake about 1 hour or until noodles are tender. Remove from oven, sprinkle with reserved mozzarella cheese. Let stand 15 minutes before cutting.

Garden Vegetable Eggs

3 tbsp margarine or butter

2 cups (2 medium) thinly sliced zucchini

1 cup sliced fresh mushrooms

1 medium onion, thinly sliced

2 medium tomatoes cut into wedges (2 cups)

½ tsp basil leaves

Salt and pepper to taste

12 eggs

¼ cup water

2 tbsp margarine or butter

Basil leaves



In large skillet, melt 3 tbsp margarine

Add zucchini, mushrooms and onion, sauté over medium heat until crisp-tender

Add tomatoes and ½ tsp basil

Cover cook 1 to 2 minutes or until tomatoes are thoroughly heated

Remove from heat,

Salt and pepper to taste

Arrange on serving platter, cover, keep warm

Meanwhile in large bowl combine eggs and water beat with fork until well blended. In large skillet, melt 2 tbsp margarine

Add eggs, cook over medium heat until eggs are firm but moist, stirring occasionally

Spoon eggs over vegetables. Sprinkle with basil. Serve immediately

6 to 8 servings

Harvest Zucchini Pie

This is actually a crust less Quiche


4 cups peeled, chopped zucchini

1 small onion, finely chopped

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon coarsely chopped fresh basil

1/4 teaspoon nutmeg

2 eggs, beaten

1 cup homemade or prepared croutons



Preheat oven to 350 degrees, grease 9 inch pie plate



Combine zucchini, onion, salt, pepper, basil, nutmeg and eggs

Press into prepared pie plate. Scatter croutons across top

Bake for 12 minutes, or until done

To serve, cut into wedges. Serve hot or at room temperature

Serves 8

Lemon Thyme Zucchini Bake




1/4 cup seasoned bread crumbs

1/4 cup Parmesan cheese

1 tsp dried lemon thyme

2 large zucchinis, thinly sliced

1 large Vidalia onion, thinly sliced

4 tbsp butter, melted



Preheat oven to 425

Mix bread crumbs, cheese, and lemon thyme,

In round casserole dish, layer 1/2 of the zucchini and 1/2 of the onion slices

Baste with butter

Add half the bread crumb mixture. Repeat Layers and bake, covered, for 20 minutes

Serves 4 to 6

Zucchini/Yellow Summer Squash Casserole




2 lbs squash

1/4 cup chopped onion

1 can cream of chicken soup

1 cup dairy sour cream

1 cup shredded carrots

1 (8oz) pkg seasoned stuffing mix

1/2 cup butter



Cook sliced squash and onion in boiling, slightly salted water for about 3 min

Squash must still be a little crisp

Drain

Combine chicken soup and sour cream

Stir in the shredded carrots, squash and onions, add salt to taste

Combine stuffing mix with the melted butter

Spread half the stuffing mix in the bottom of a 12x7x2 inch baking dish

Spoon vegetable mixture on top of stuffing, and then sprinkle the rest of the stuffing on top of the vegetable mixture

Bake at 350 for 25 to 30 minutes or until hot and bubbly

Serves 6

Zucchini Pickles




4 quarts zucchini

6 white onions, sliced

2 green peppers, chopped

2 cloves garlic

5 cups sugar

1-1/2 teaspoons turmeric

1-1/2 teaspoons celery seed

2 tablespoons mustard seed

3 cups cider vinegar



Do not pare zucchini

Thoroughly wash and slice in about 1/2 inch slices

Add onions, peppers and whole garlic cloves.

Add salt, cover with cracked ice,

Mix thoroughly.

Let stand 3 hours, drain thoroughly

Combine remaining ingredients;

Pour over zucchini mixture.

Heat just to a boil

Seal in hot, sterilized jars

Makes 8 pints.

Creamy Zucchini Soup




4 to 5 green onions

4 small zucchini

4 stalks celery

2 cloves garlic, minced

2 tbsp butter or margarine

2 tbsp all purpose flour

1 can (10-1/2oz) chicken broth

1-1/2 cups half and half

1/2 tsp paprika

Dash of salt or to taste

4 tbsp finely chopped parsley



Rinse onions

Cut into thin slices

Rinse zucchini and celery

Peel celery if tough

Cut into thin strips

Slice zucchini



In a large saucepan, melt butter

Add green onion, celery and garlic

Sauté for a few minutes

Add zucchini

Cook, stirring gently, for about 5 minutes



Sprinkle with flour

Stir to blend

Add chicken broth and half and half, a little at a time, until slightly thickened

Simmer soup over low heat for another 5 to 7 minutes



Season to taste with thyme and paprika

Add salt, if needed



Ladle soup into soup bowls

Sprinkle with chopped parsley

Serve immediately

Zucchini Pancakes




1 large or 2 small zucchinis

2 tbsp grated yellow onion

3 tbsp all purpose flour

1 tbsp cornstarch

2 tbsp finely chopped parsley

Dash salt and pepper

2 eggs

1 tsp Dijon style mustard, optional

2-3 tbsp butter or margarine



Rinse zucchini

Pat dry

Grate coarsely



In a bowl, combine grated zucchini, onion, flour, cornstarch and parsley

Stir to blend

Add salt and pepper

Beat eggs and add to zucchini mixture

Add mustard, if used



Heat butter in a skillet

Spoon mixture into skillet, forming small pancakes

Flatten mixture lightly with spoon

Pan Fry for 2 to 3 minutes on each side until crispy and lightly browned



Serve immediately

Peanut Butter Zucchini Cake




1/2 cup chunky peanut butter

1/4 cup oil

3 eggs

1 1/2 cups brown sugar, packed

1 can (8 1/2 ounces) crushed pineapple, undrained

2 cups flour

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

2 cups zucchini, peeled, shredded

1/2 cup raisins (optional)



Thoroughly mix eggs, peanut butter, oil and sugar in large bowl. Add pineapple. Gradually blend in dry ingredients, and then stir in zucchini and raisins.

Place in greased, floured 9x13 inch pan

Bake at 350 for 45 to 55 minutes.

Serve with whipped cream if desired.

Zucchini with Cheese (Zucchini con Formaggio)




1-1/2 lb Zucchini

1/4 cup all purpose flour

1-1/2 tsp salt

1-1/2 tsp dried oregano leaves

1/4 tsp pepper

1/4 cup olive or salad oil

2 medium tomatoes, sliced

1 cup dairy sour cream

1/2 cup grated Parmesan cheese



Preheat oven to 350

Lightly grease an 8x8x2 inch baking dish

With stiff brush, scrub zucchini well

Cut crosswise into 1/4 inch slices

In medium bowl, combine flour with 1/2 tsp salt, 1/2 tsp oregano, and 1/8 tsp pepper

Toss zucchini slices in seasoned flour, to coat them well

Slowly heat oil in large, heavy skillet

Sauté zucchini until golden brown about 4 minutes on each side

Drain

Cover bottom of prepared baking dish with zucchini

Top with tomato slices

Combine sour cream, rest of salt, oregano, and pepper, spread evenly over tomato slices

Then sprinkle with grated cheese

Bake 30 to 35 minutes, or until cheese is melted and zucchini is tender

Makes 6 servings

Stuffed Zucchini




2 lb zucchini

1 cup finely chopped onion

1/2 tsp saffron, crumbled

2 tbsp butter or margarine

1/4 cup yogurt

1 tsp ground cardamom

1/4 cup heavy cream

1/2 cup blanched whole almonds, chopped

1-1/2 tsp lemon juice

1 tsp salt

1/4 tsp pepper

1 tbsp finely chopped parsley



Scrub zucchini well with vegetable brush

Halve lengthwise, with tsp, scoop out interior, leaving a shell

Chop zucchini pulp

Combine with onion and saffron

In hot butter in medium saucepan, sauté vegetable mixture, stirring, 5 minutes

Add yogurt and cardamom simmer, uncovered, over low heat and stirring occasionally, about 15 minutes, or until mixture is almost dry

Stir in cream, almonds, lemon juice, and salt, cook, stirring, 2 minutes longer

Meanwhile, preheat oven to 350

Arrange zucchini shells in shallow baking pan

Lightly fill shells with vegetable mixture

Sprinkle with pepper

Bake 25 to 30 minutes, or until golden brown and shells are tender

Just before serving, sprinkle with finely chopped parsley

Makes 4 to 6 servings

Zesty Zucchini Boats




6 to 8 small (5 to 7 inch) or 2 large (10-inch) zucchini

12 oz ground pork sausage

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1/2 cup chopped red bell pepper

11-0z can condensed zesty tomato soup

1/4 cup grated parmesan cheese

1 tablespoon parsley flakes

7-oz can Golden Sweet Corn, drained

4.5 oz Sliced mushrooms drained

4-oz (1 cup) shredded mozzarella cheese

4 cups shredded lettuce, if desired.



Heat oven to 350F.

Remove stems from zucchini slice each in half lengthwise

Cut thin slice from bottom of each half so each half will sit upright.

Remove seeds, leaving 1/4 inch pulp on all sides

Place on ungreased 15 x 10 x 1 inch baking pan

Set aside



In large skillet, brown sausage with onion and peppers, drain well

stir in 1/3 cup of soup, parmesan cheese, parsley flakes, corn and mushrooms

Spoon sausage mixture evenly into zucchini halves

Spoon remaining soup evenly over tops

Carefully cover with foil

Do not touch sausage mixture



Bake a t 350 for 25 to 35 minutes, or until thoroughly heated

Remove foil

Sprinkle about 1 tablespoonful of mozzarella cheese on each filled zucchini

Broil 6 to 8 inches from heat for 2 to 3 minutes

Or until cheese is melted and begins to brown

Serve on shredded lettuce

Zucchini Layered Casserole



1 Zucchini, thinly sliced

1 onion, thinly sliced (Vidalia or Walla Walla onion if possible)

1 Tomato, thinly sliced

Margarine

Italian bread crumbs

Grated parmesan or Mozzarella cheese



Layer sliced vegetables in a baking dish.

Dot with margarine.

Cover with bread crumbs.

Cover and bake 50 minutes at 350.

Sprinkle grated cheese on top and bake uncovered for another 10 minutes
