| Slow Cooker Chicken And Stuffing 1 package Chicken flavored stuffing mix (6 oz)½ cup water2 ½ cups chopped cooked chicken breast2 medium zucchini (about 1 lb total) cut into ½ inch pieces8 oz mushrooms, sliced1 green bell pepper, chopped1 onion chopped1 can reduced fat condensed cream of chicken soup (10 ¾ oz) In a large bowl toss together the stuffing mix, flavor packet (if included with the stuffing), and water, the stuffing will not be completely moistened.Set asideIn large bowl, combine the chicken, zucchini, mushrooms, pepper, and onionStir in the soupPlace half in the slow cookerTop with half of the stuffingRepeat the layers with the remaining soup and stuffingCover and cook on the low heat setting for 5 to 6 hours or on the high heat setting for 2 ½ to 3 hours, or until the vegetables are tender and the flavors are blendedMakes 6 servingsPer serving 261 caloriesProtein 24 gCarbs 29 gFat 5 gSodium, 771 mgFiber 3 g | |

| DOUBLE CHOCOLATE ZUCCHINI BREAD
1 1/2 CUP SUGAR 2 T. VANILLA 2 1/2 CUPS FLOUR 1/4 CUP OF UNSWEETENED COCOA 2 CUPS SQUASH 1 CUP WALNUTS 1 CUP MARGERINE 2 EGGS 1/2 CUP SOUR CREAM 1 t. BAKING SODA 6 oz. CHOCOLATE CHIPS Grease and flour a 13x9 pan. In large bowl, with mixer at low speed, beat sugar, margarine, vanilla and eggs till blended. Increase speed to high, beat till light and fluffy, about 5 min. Reduce speed to low, and add flour, sour cream, cocoa, baking soda, Beat till blended, constantly scraping bowl. Fold in squash and chocolate chips, and nuts. Batter will be thick. Bake at 350 oven for 40-45 min. Dust with confectionery sugar | |

| Cheesy Zucchini Lasagna 2 cups shredded fat-free or part skim mozzarella cheese (8 oz) 2 cups shredded zucchini (about 2 medium) 1 cup nonfat or low fat ricotta cheese ¼ cup grated parmesan cheese 2 ¾ cups meatless spaghetti sauce 9 uncooked lasagna noodles Heat oven to 350 Reserve ½ cup of the mozzarella cheese. Mix remaining mozzarella cheese, the zucchini, ricotta cheese and parmesan cheese. Spread ¾ cup of the spaghetti sauce in un-greased rectangular baking dish, top with 3 of the noodles. Spread half of the cheese mixture over noodles in dish, top with ¾ cup of the spaghetti sauce. Repeat with 3 noodles, remaining cheese mixture and ¾ cup of the spaghetti sauce. Top with remaining noodles and spaghetti sauce Cover with aluminum foil and bake about 1 hour or until noodles are tender. Remove from oven, sprinkle with reserved mozzarella cheese. | Garden Vegetable Eggs
3 tbsp margarine or butter
2 cups (2 medium) thinly sliced zucchini
1 cup sliced fresh mushrooms
1 medium onion, thinly sliced
2 medium tomatoes cut into wedges (2 cups)
½ tsp basil leaves
Salt and pepper to taste
12 eggs
¼ cup water
2 tbsp margarine or butter
Basil leaves
In large skillet, melt 3 tbsp margarine
Add zucchini, mushrooms and onion, sauté over medium heat until crisp-tender
Add tomatoes and ½ tsp basil
Cover cook 1 to 2 minutes or until tomatoes are thoroughly heated
Remove from heat,
Salt and pepper to taste
Arrange on serving platter, cover, keep warm
Meanwhile in large bowl combine eggs and water beat with fork until well blended. In large skillet, melt 2 tbsp margarine
Add eggs, cook over medium heat until eggs are firm but moist, stirring occasionally
Spoon eggs over vegetables. Sprinkle with basil. Serve immediately

| Zucchini Layered Casserole
1 Zucchini, thinly sliced
1 onion, thinly sliced (Vidalia or Walla Walla onion if possible)
1 Tomato, thinly sliced
Margarine
Italian bread crumbs
Grated parmesan or Mozzarella cheese
Layer sliced vegetables in a baking dish.
Dot with margarine.
Cover with bread crumbs.
Cover and bake 50 minutes at 350.
Sprinkle grated cheese on top and bake uncovered for another 10 minutes | |
