Tomato Quiche




1 cup chopped onion

2 tbsp butter

4 large tomatoes, peeled, chopped, seeded and drained

1 tsp salt

1/4 tsp pepper

1/4 tsp dried thyme

2 cups (8 oz) shredded Monterey Jack Cheese, divided

1 unbaked pastry shell (10 inches)

1-1/2 cups half and half cream



In a skillet, sauté onion in butter until tender.

Add tomatoes, salt, pepper and thyme

Cook over medium high heat until liquid is almost evaporated, about 10 to 15 minutes

Remove from heat



Sprinkle 1 cup cheese into pastry shell

Cover with tomato mixture

Sprinkle with remaining cheese

In a mixing bowl, beat eggs until foamy

Stir in half and half cream

Mix well

Pour into pastry shell

Bake at 425 for 10 minutes

Reduce heat in 325 bake for 40 minutes more or until top begins to brown and a knife inserted near the center comes out clean

Let stand 10 minutes before cutting

6 to 8 servings

Tomato Ketchup




1/2 pk tomatoes

3 red peppers

2 medium sized onions cut fine

2 tbsp salt

1/3 cup sugar

2 cups vinegar

2 tsp celery salt

2 tsp ground mustard

1 tbsp whole allspice

1 tbsp cloves

1 tbsp cinnamon

1 tsp paprika



Cook tomatoes, peppers and onions together without adding water

Press mixture through strainer, and measure pulp

To pulp (4 quarts) add the salt, sugar and spices

Place whole spices in a bag during the cooking and remove bag before pouring the ketchup into jars

Ground spices, except paprika, will darken ketchup

Long, slow cooking also gives a dark color

Cook ingredients together, except vinegar, rapidly for 1 hour, add vinegar and cook mixture until it is thick.

Tomato Chutney




1-1/4 lbs tomatoes

1 yellow onion

4 cloves garlic, minced

1/2 cup raisins

1/2 tsp salt

Dash cayenne pepper

1/2 cup brown sugar

1/2 cup white wine vinegar



Rinse tomatoes

Dip in hot water and quickly peel

Chop coarsely

Place all the ingredients in a heavy saucepan

Bring to a boil

Cook

Stirring constantly, until chutney is thick

Let chutney cool slightly

Ladle into clean glass jars with tight fitting lids

Seal and keep in refrigerator or other cool place

Spicy Tomato Bread




2-1/2 cups flour

1/2 cup grated Swiss or cheddar cheese

1/4 cup grated Parmesan cheese

1 tablespoon baking powder

3/4 tablespoon sugar

1 teaspoon garlic salt

1 teaspoon oregano

3/4 teaspoon salt

1/8 teaspoon cayenne

Milk

1 (16-ounce) can stewed tomatoes, drained, coarsely chopped, reserve liquid

2 eggs

1/4 cup oil



Preheat oven to 350 degrees

Grease an 8 x 4 x3 inch loaf pan



Stir together flour, cheeses, baking powder, sugar, garlic salt, oregano, salt and cayenne.

Add enough milk to reserved tomato juice to make 2/3 cup liquid.

Add eggs and oil, stir to blend well.

Mix with flour mixture



Fold in chopped tomatoes.

Batter will be thick.

Pour into prepared pan

Bake for 60-minutes or until toothpick comes out clean.

Makes 1 loaf

1 can condensed tomato soup
1/2 cup water
2 eggs

Mix only above ingredients
Following directions on package
If desired, fold in 1 cup chopped walnuts
Bake as directed
Frost with your favorite white frosting

Tomato Soup Cake

2-1/4 cups cake flour or 2 cups all-purpose flour
1-1/3 cups sugar
4 teaspoons baking powder
1 teaspoon baking soda
1-1/2 teaspoons allspice
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 can condensed tomato soup
1/2 hydrogenated shortening
2 eggs
1/4 cup water

Preheat oven to 350F
Generously grease and flour 2 round layer pans, 8 or 9 or an oblong pan
Measure dry ingredients into large bowl
Add soup and shortening
Beat at low to medium speed for 2 minutes scraping sides
Add eggs and water
Pour into pans
Bake 35 to 40 minutes
Let stand in pans 10 minutes
Remove and cool on rack
Frost with your favorite white frosting
For a 9" tube pan, bake 1 hour
Optional you can add 1 cup chopped nuts or cup raisins

Cheesy Rice n' Tomatoes




1 tbsp Zesty Italian Dressing

2 tbsp chopped onions

1 cup minute White Rice, uncooked

1-1/4 cups fat free reduced sodium chicken broth

1 plum tomato, chopped

1 oz (1/8 of 8oz pkg) Cream Cheese

2 tbsp Shredded Parmesan Cheese

1 tbsp chopped fresh parsley



Heat dressing in small saucepan on medium heat

Add onions, cook and stir 3 minutes or until tender



Stir in rice, broth and tomatoes

Bring to boil,

Reduce heat to low, simmer 3 minutes



Add cheeses and parsley, stir until blended

Remove from heat

Let stand, covered, 5 minutes before serving



Makes 2 servings, about 1 cup each

Green Tomato Pickles




15 pounds sliced green tomatoes, Sprinkle with salt and allow to stand over night



The following morning

Mix 1 quart vinegar,

5 pints sugar,

2 tablespoons whole allspice

2 tablespoons stick cinnamon



And boil 30 minutes. Seal while hot.

Makes 6 pints

Tomato Pudding




1/2 stick butter or margarine

2/3 cup brown sugar

2 cups cubed soft bread crumbs

One 10-1/2 oz can of tomato puree

1/4 cup water

1/4 tsp salt



Melt butter, pour over bread and toss

Heat the tomato puree, water, salt and brown sugar

Simmer 5 minutes, and then pour over bread cubes

Toss

Bake in a 1-1/2 quart covered casserole for 45 minutes

Serves 6

Cherry Tomato Vinaigrette




3 tbsp olive oil

1 pint cherry tomatoes, halved

2 dried tomatoes packed in oil, finely chopped. (Optional)

1-1/2 tblsp balsamic vinegar

2 tblsp shredded fresh basil

2 tbsp chopped fresh parsley

Salt and freshly ground pepper to taste



Heat 1 tbsp oil in a large skillet over medium high heat. Add cherry tomatoes and, if desired, dried tomatoes. Cook 2 minutes or until tomatoes are heated. Remove from heat, stir in vinegar, remaining 2 tblsp oil, basil, and parsley. Season to taste with salt and pepper

Italian Tomato Dressing


1/2 cup oil

1/3 cup cider vinegar

1 (8oz) can tomato sauce

1/2 tsp salt

2 tbsp sugar

1 tsp dry mustard

1 tsp paprika

1/2 tsp oregano

2 tsp Worcestershire sauce

1/2 clove garlic, finely chopped

2 tsp finely chopped onion

1 tbsp finely chopped celery

2 tbsp salad dressing



Combine all ingredients in 1 quart mixing bowl

Beat at medium speed 2 minutes

Or blend ingredients in blender for 15 seconds on high speed

Chill

Store in refrigerator

Storage time, 1 month

Makes 1 pint

3 medium tomatoes (about 1-1/4lb)

1 tbsp chopped parsley

2 tbsp grated onion

1/4 cup grated Parmesan cheese

1-1/2 tsp salt

Dash pepper

1 tsp Worcestershire sauce

1 tbsp vinegar

1 cup dairy sour cream



Chop tomatoes coarsely

Measure 3 cups

Combine tomatoes with rest of ingredients, mixing well

Refrigerate until well chilled before serving

Delicious over lettuce wedges

Makes about 4 cups

Herbed Tomato Sauce




2 tbsp minced shallots

5 crushed peppercorns

1 tbsp tarragon

4 tbsp vinegar

4 tbsp water

2 egg yolks

1/2 cup butter, melted

1 tbsp chopped parsley

2 tsp chopped tarragon

Dash salt and pepper



In a saucepan, combine shallots, pepper, tarragon, vinegar and water

Cook until 2 tbsp liquid remain

In top of a double boiler, beat egg yolks until well blended

Add strained liquid

Set over hot, but not boiling, water

Add butter, whisking constantly, until sauce thickens

Add parsley, tarragon, salt and pepper



Add 1 tsp Herbs de Provence to the Bearnaise sauce

Add 5 tbsp peeled, chopped fresh tomatoes, let sauce sit in top of a double boiler for at least 10 minutes before servingThis is good on Lamb or roast veal or chicken

Tomato Sauce


1/2 can tomatoes

2 tablespoons butter

2 tablespoons flour

2 tablespoons chopped onion

2 tablespoons chopped peppers

1/2 teaspoon salt

1 teaspoon sugar

Bay leaf



Cook the tomatoes for 15 minutes

Add onion, pepper, and bay leaf.

Strain

Brown the flour in the butter, add the tomato liquid gradually and cook until it thickens

Season

Serve with meat, spaghetti, etc

Egg Flower Tomato Soup




1 onion thinly sliced

4 tomatoes, skinned, seeded and chopped

1 tbsp vegetable oil

4 cups canned chicken broth

Salt and pepper to taste

1 egg, beaten

Fresh parsley



Sauté onion and tomatoes in vegetable oil for 5 minutes without browning

Pour off oil, add broth and seasonings and simmer for 30 minutes

Add beaten egg, pouring slowly while stirring constantly until egg separates into shreds

Serve with a tiny piece of parsley floating on top

Hawaiian Holiday Cup




2 cans (10-1/2 oz) condensed tomato soup, undiluted

1 cup canned pineapple juice

1 tsp finely grated green pepper

1 tbsp finely grated onion

1 tsp curry powder

1/4 tsp ground cardamom

1/4 tsp nutmeg

6 tsps heavy cream



In medium saucepan, combine all ingredients, except cream, with 3 quarts water, stir until well mixed



Over high heat, bring to boiling, uncovered, stir occasionally



Reduce heat; simmer 5 minutes, stirring occasionally



Serve at once, in mugs

Swirl 1 tsp cream into each serving

Makes 6 servings

Tomato Surprise




4 large tomatoes

4 tablespoons quick cooking oats

2 tablespoons cream cheese

1 teaspoon grated onion

2 tablespoons crisply fried bacon, chopped

Salt and pepper to taste



Cut tops off tomatoes and scoop out pulp

Mix pulp with other ingredients.

Fill tomatoes and replace tops

Serve on crisp lettuce leaf

Decorate with slices of hard cooked eggs and parsley if desired

Ketchup/Raisin Cookies

Ketchup gives cookies a rose-beige color and faint spicy taste fresh Lemon Glaze contributes pleasing piquant flavor contrast


1 c margarine

1/2 c sugar

1/2 c light brown sugar, firmly packed

2 eggs

1 tsp vanilla

2-3/4 c sifted flour

1/2 tsp baking soda

1/8 tsp salt

1/4 c tomato ketchup

3/4 c raisins

1/2 c chopped nuts

Lemon Glaze (recipe follows)



Beat margarine until light

Gradually add white and brown sugars

Beating constantly

Beat until light and fluffy

Beat in eggs and vanilla

Sift together flour, baking soda and salt

Stir into creamed mixture alternately with ketchup

Fold in raisins and nuts

Bake in 375F for 10 to 12 minutes

Brush with lemon glaze while cookies are hot

Makes 4 dozen

Lemon Glaze

Combine 1-1/2 c sifted confectioner’s sugar with

2 tbsp strained lemon juice

Stir until smooth

If mixture is not thin enough to make a transparent glaze on cookies, add more lemon juice, 2 or 3 drops at a time until right consistency

Makes 1/2 cup

Green Tomato Pie


3 cups sliced green tomatoes (enough to fill pie)

1 cup sugar

6 tbsp lemon juice

6 tbsp flour

4 tsp grated lemon rind

1/4 tsp salt

3 tbsp butter



Arrange sliced tomatoes in lower crust

The pie should be rounding filled and although it is not covered with an upper crust, strips of crust add much to its appearance. Mix flour and sugar and sprinkle about 2 or 3 tbsp of this mixture over the bottom of the lower crust before adding the tomatoes

Add the remainder of this mixture between layers of tomatoes and over the top before sprinkling lemon juice, the grated rind and butter over the top of the tomatoes

Bake 375 for 35 minutes or until done

Pennsylvania Tomatoes




6 large tomatoes (about 3 lbs)

1/2 cup unsifted all purpose flour

1/4 lb butter or margarine

Light brown sugar

1 tsp salt

1/4 tsp pepper

1-1/2 cups heavy cream



Trim a slice from top and bottom of each tomato

Cut each tomato, crosswise, into 3 slices



Dip cut sides of slices in flour, coating completely



In hot butter in large skillet, sauté slices until nicely browned on underside

Sprinkle each with 1/2 tsp brown sugar



Turn slices, sprinkle with some of salt, pepper, and a little more brown sugar

When other side is nicely browned, turn slices again



Pour cream into skillet, cook, over medium heat, uncovered 5 minutes, or until tomato slices are tender

Makes 6 servings

Stuffed Tomato Bake




4 medium sized tomatoes

2 cups fresh bread cubes, toasted

1/2 cup Miracle Ship Salad Dressing

1/2 teaspoon basil



Cut a slice from stem end of tomatoes.

Scoop out centers chop and combine with bread cubes, salad dressing and basil

Toss lightly

Fill tomato shells with mixture and place in a shallow baking dish

Bake at 375 for 20 minutes

Hot Turkey Stuffed Tomatoes




6 to 8 large (2 1/2 to 3 1/2 inch) Tomatoes

2 tablespoons flour

1/8 teaspoon pepper

2/3 cup undiluted Carnation Evaporated milk

1/4 cup Water

3 cups cooked diced Turkey

1/2 cup chopped salted cashews

1/2 cup chopped celery

1/4 cup chopped green onion

14 teaspoon marjoram leaves

1/4 teaspoon basil leaves



Cut tops off tomatoes. Scoop out pulp and seeds, save for future use. Turn tomatoes upside down to drain. Combine flour and pepper in medium saucepan. Gradually stir in evaporated milk and water. Cook over medium heat, stirring constantly, until mixture just comes to a boil and thickens. Add turkey, cashews, celery, onion, marjoram and basil. Heat, stirring constantly, just until mixture is heated through. Spoon into tomato shells. Place in 12x7 1/2x 2 inch baking dish. Bake in slow oven 325 for 15 to 20 minutes, or until heated through.

Turkey stuffed tomatoes may be served cold

Do not bake makes 6 to 8 servings.

Tomato Gravy




2 tblsp butter or margarine
