Blackberry Jam




6 cups prepared fruit (about 2 1/4 quarts fully ripe blackberries)

4 1/2 cups sugar

1 box Sure*Jell Light Fruit Pectin



Prepare fruit. Thoroughly crush one layer at a time, about 2 1/4 quarts blackberries. Press half the pulp through a sieve to remove some of the seeds, if desired.

Measure 6 cups pulp into 6 or 8 quart saucepan.



Then make Jam. Mix 1/4 cup sugar with fruit pectin, and then stir into fruit in saucepan. Place over high heat and stir until mixture comes to a full boil. Immediately add remaining sugar and stir. Bring to a full rolling boil and boil hard 1 minute. Stirring constantly remove from heat and skim off foam with metal spoon. Ladle quickly into hot jars, filling to within 1/8 inch of top. Cover and process in boiling water bath for 10 minutes. Makes about 10 (8ounce) jars.

Blackberry Pie




3 cups fresh blackberries

1 cup sugar

2 tbsp flour

2 tbsp lemon juice

1/8 tsp salt

1 pie shell

1 tbsp butter



Combine berries, sugar, flour, lemon juice and salt

Fill pie shell and dot with butter and cover with top crust

Bake in very hot oven 450 for 10 minutes

Reduce temperature to moderate 350F

And bake 25 to 30 minutes longer

Makes one pie

Blackberry Cream Pie




1-1/3 cups sweetened condensed milk

1/4 cup lemon juice

1-1/3 cups fresh blackberries

1 pie shell



Combine milk and lemon juice and stir until thickened

Fold in 1 cup of fruit and pour into pastry shell

Cover with whipped cream topping and garnish with remaining berries

Chill

Makes 1 pie



Other fruits may be used such as raspberries, sliced apricots, bananas, peaches or strawberries or 1-1/2 cups drained crushed pineapple

Blackberry Wine Cake for Valentines Day

Ingredients :

1 ea Box white cake mix
1/2 c oil
1 c blackberry wine
3 oz pkg blackberry jello
1/2 c pecans
4 ea eggs
Glaze:
1 1/2 c powdered sugar
1/2 c blackberry wine

Preparation :

Combine the cake mix, oil, blackberry wine, blackberry jello, pecans; add the eggs 1 at a time. Grease heavily and flour Bundt pan. Pour batter in pan (batter will be thin). Bake 50-60 min. at 325 degrees F. Glaze: Mix together the powdered sugar and blackberry wine; bring to a boil. Leave cake in pan and pour 1/2 mixture over the cake. Let stand 30 minutes. Turn out and pour remainder of glaze over cake.
