Butterscotch Apples




6 large tart apples, peeled, cored and sliced

Brown Sugar

1-1/2 tsp cinnamon

1/4 tsp nutmeg

Flour

1/4 cup orange juice

1/4 cup butter or margarine



Heap apples in greased 8 inch 2 inch deep round baking dish

Mix 1/2 cup packed brown sugar, the spices and 2 tbsp flour

Sprinkle on apples and pour orange juice over top

Blend 1/2 cup packed brown sugar, the butter and 1/3 cup flour with fork until crumbly

Spread on apples

Cover with foil and bake in hot oven (425F) 20 minutes

Remove foil and bake about 15 minutes longer

Makes 6 servings

Butterscotch Apple Dip


1 (6oz) pkg butterscotch flavored chips

1 (14oz) can Sweetened Condensed Milk

1/4 tsp salt

2 tsp white vinegar

1/4 to 1/2 tsp ground cinnamon

Apple Wedges



In heavy saucepan, over low heat, melted chips with Sweetened Condensed Milk and salt

Remove from heat, stir in vinegar and cinnamon

Serve warm with apples

Refrigerate leftovers

Can be served warm as an ice cream topping also

Baked Apple Pudding

1/2 graham cracker crumbs

3/4 cup water

3 tablespoons lemon juice



Mix brown sugar with apples,

Add remaining ingredients and mix well

Turn into greased baking dish.

Bake in moderate oven 375 F for 30 minutes or until apples are tender

Serves 4

Cinnamon Candy-Glazed Baked Apples


1 cup sugar

1/4 cup cinnamon candies

1 cup water

4 large baking apples

2 teaspoons lemon juice

1 teaspoon butter



Preheat oven to 375 degrees

Lightly grease small baking dish

In small saucepan, combine sugar and cinnamon candies with water

Boil, stirring until sugar dissolves,

Reduce heat, simmer uncovered 2 minutes.

Remove from heat

Pare top 1/3 of apples.

Core apples, leaving bottom intact

Brush apples with lemon juice arrange in baking dish

Dot centers with butter

Brush generously with sugar and cinnamon glaze

Bake, uncovered, 1 hour, brushing frequently with rest of glaze

Serve warm or cold

Serves 4

Caramel Taffy Apples


1 cup granulated sugar

1 (14oz) can condensed milk (not evaporated)

Apples

1-1/2 cups white corn syrup

1 tsp vanilla



Put ingredients into a heavy saucepan and cook slowly,

Stirring gently, until the mixture forms a hard ball

(The caramel coating over the apple will be of the same consistency as the tested ball)

Cook slowly and when of the proper consistency dip clean, whole apples, using a skewer for dipping

Remove to buttered platters or heavy waxed paper to cool

Vanilla should be added when the mixture is removed from the fire.

Candy Corn 1 C sugar2/3 C white corn syrup1/3 C butter Combine in pan, bring to boil stirring CONSTANTLY. Turn heat low and Boil 5 minutes. Stir occasionally. Remove from heat and add: 1 tsp vanilla several drops food coloring (optional) Meanwhile, combine: 2 1/2 C powdered sugar1/4 tsp salt1/3 C powdered milk Add all at once to mixture in pan. Stir until cool enough to handle.Knead until stiff enough to hold its shape. Shape into triangles, or Any shape desired. Makes 1 3/4 lb candy.

Devil Dogs




1/2 cup shortening

1 cup sugar

1/2 cup unsweetened cocoa powder

2 cups flour

1-1/2 teaspoons baking powder

1 cup milk

1 teaspoon vanilla



Filling



1/2 cup butter

1/2 teaspoon vanilla

1-1/3 cups confectioner’s sugar

1/2 (7 ounce) jar marshmallow crème

Red and yellow food coloring

Halloween nonpareils (optional)



Preheat oven to 425 degrees.

Cream together shortening and sugar

Add cocoa powder beat well

Sift together flour and baking powder

Add to cocoa powder mixture alternately with milk

Mix well

Add vanilla

Drop by teaspoonfuls onto a greased cookie sheet

Flatten a little

Bake for 5 to 7 minutes



For Filling, beat together butter, vanilla, confectioner’s sugar and marshmallow crème

Tint filling orange using red and yellow food coloring

Spread on cookie

Top with another cookie

Decorate edges with optional nonpareils

Gingerbread & Applesauce Ice-Cream Cones




12 flat-bottom ice cream cones

1 pkg (14oz) gingerbread mix

1-1/2 pints soft vanilla ice cream

1 cup applesauce



Preheat oven to 350F

Arrange ice cream cones on large cookie sheet

Make gingerbread mix as package label directs, using amount of water specified

Fill each cone with 3 level tbsp gingerbread batters

Bake 25 minutes, or until cake tester inserted in center comes out clean

Then remove cones to wire rack let cool

Meanwhile, in large bowl, combine ice cream with applesauce, mix well

Turn into ice cube tray

Freeze until firm about 1 hour

To serve

Top each gingerbread cone with scoop of applesauce ice cream

Makes 12

Great Pumpkin Parfait




1 package (3oz) Jell-O Orange Flavor Gelatin

1 cup boiling water

1 package (4-serving size) Jell-O Vanilla Flavor Instant Pudding and Pie Filling

1 cup cold milk

1/2 teaspoon pumpkin pie spice

1 can (16oz) pumpkin

1 cup thawed Whipped Topping

1/4 cup cold water



Dissolve gelatin in boiling water.

Prepare pudding as directed on package, using 1 cup milk and beating 1 minute. Blend in spice and 1/2 cup gelatin.

Chill until thickened.

Then beat until fluffy.

Blend in pumpkin.

Fold in whipped topping.

Spoon into dessert glasses.

Chill.

Add cold water to remaining gelatin.

Chill until slightly thickened.

Spoon into glasses on top

Hallow'ed Pumpkin Tarts




Pastry for 2 crust pie

3/4 cup canned pumpkin

1 can (6oz) evaporated milk, undiluted

1 cup light brown sugar, firmly packed

2 eggs, slightly beaten

2 tsp pumpkin pie spice

1/2 tsp salt



Divide pastry into 8 equal parts

On lightly floured surface, roll each portion into a 5 inch circle

Use to line 8 (3-1/2 inch) tart pans or 8 (5oz) custard cups, pressing each circle firmly to bottom and side

Trim pastry from top edge

Reroll trimmings

Cut into 8 (1-1/2 inch) circles

Then trim each circle to resemble a pumpkin

Refrigerate, on waxed paper, along with tart shells until ready to use



Meanwhile, preheat oven to 400F

In large bowl, using rotary beater, beat pumpkin, evaporated milk and sugar

Add remaining ingredients, beating until well combined

Pour pumpkin mixture into each tart shell

Bake tarts, on cookie sheet, 25 to 30 minutes, or until knife inserted in filling comes out clean

Last 10 minutes or baking, place a pumpkin cutout on each tart

Let cool on wire rack

Serve garnished with whipped cream, if desired

Makes 8

Jack-O-Lantern Treats

¼ cup margarine or butter

1 pkg (10oz about 40 regular) marshmallows or 4 cups miniature marshmallows

5 cups Marshmallow Krispies cereal



Melt margarine in large saucepan over low heat

Add marshmallows and stir until completely melted

Cook over low heat 3 minutes longer, stirring constantly.

Remove from heat

Add Marshmallow Krisipies Cereal

Stir until well coated

To make five Jack-O-Lanterns, divide cereal mixture into five equal parts

Form pumpkin shaped balls and stems

Decorate with frosting and Halloween candies

Yield 5 Jack-O-Lantern Treats

Note for best results are obtained when using fresh marshmallows

Orange Moons




4 large oranges

1 pkg (4 serving size) Jello Orange Gelatin Dessert

1 cup boiling water

2 cups Vanilla Ice Cream



Cut oranges in half.

Remove fruit from each half. Scrape shells clean with a metal spoon

Finely chop fruit, removing membrane and set aside



Dissolve Gelatin Dessert in boiling water. Add Ice Cream by spoonfuls, stirring until smooth



Chill until mixture is slightly thickened, about 15 minutes.

Fold in chopped fruit



Spoon into orange shells. Chill until set, about 30 minutes

Makes 8 servings

Pumpkin Pancakes



2 c. Bisquick mix

2 tbsp. brown sugar

2 tsp. cinnamon

1 tsp. allspice

1 1/2 c. skimmed evaporated milk

2 tbsp. oil

2 eggs

1 tsp. vanilla

1/2 c. pumpkin



Mix all ingredients well & drop w/ladle onto a hot griddle or use a lg. iron skillet which has been greased well.

Pumpkin Muffins


Ingredients

  • 4 Eggs
  • 2 cups sugar
  • 1 1/2 cups cooking oil
  • 1 3/4 cup pure pumpkin
  • 1 1/2 tsp cinnamon
  • 2 tsp Baking Powder
  • 2 tsp Baking Soda
  • 1 tsp salt
  • 3 cups flour
  • 1 cup raisins
  • brown sugar



Procedure

Beat the eggs, sugar, oil and pumpkin till smooth.



Add the spices to the flour and mix well then add to the pumpkin mixture. Add the raisins.



Fill you tins 2/3 full and then sprinkle with brown sugar.



Bake at 375 for 15-20 minutes.





These muffins are very yummy and an excellent way to get your kids to eat their veggies, lol!! I got it from a wonderful woman at work named Helen.

Pumpkin Ice Cream




Melt over simmering water

10 marshmallows, diced

1 tbsp boiling water



Meanwhile, combine in bowl

1 cup canned pumpkin

1/3 cup firmly packed brown sugar

2 egg yolks, slightly beaten

2 tbsp orange juice



And a mixture of

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

1/2 tsp salt

Blend thoroughly with marshmallows

Cook over simmering water, stirring constantly, about 10 min

Pour into a bowl and set in refrigerator to chill

Using chilled bowl and beater, beat until of medium consistency



Then add 1 cup chill whipping cream



Fold whipped cream into chilled pumpkin mixture

Pour into 1qt refrigerator tray

Freeze until firm

Pumpkin Custards




3 eggs slightly beaten

1 (15oz) can pumpkin

1-1/2 cups whipping cream, half and half, or light cream

2/3 cup packed brown sugar

1 tsp pumpkin pie spice

1/2 tsp salt

2/3 cup coarsely chopped pecans, toasted

1/4 cup maple syrup



Preheat oven to 350

In a large mixing bowl combine eggs, pumpkin, cream, brown sugar, pumpkin pie spice and salt

Mix well with a whisk

Divide mixture among 8 (6oz) custard cups

Place in a roasting pan

Pour hot water into pan around custard cups to a depth of 1 inch

Bake for 45 to 55 minutes or until set

Remove cups from water

Cool slightly on a wire rack

In a small bowl, combine chopped, toasted pecans and maple syrup, spoon ontop of warm custards

Serve warm or chilled

Serves 8

Rosy Glazed Apples


1 regular package Jell-O Strawberry Gelatin

1 regular package Jell-O Apple Gelatin

1-1/2 cups boiling water

1 cup cold water

6 large red baking apples, cored

1 large stick cinnamon

6 whole cloves



Dissolve both packages of Jell-O in boiling water, add cold water

Starting at stem end, pare off a 1 inch strip of skin around each apple

Place apples, stem end up, in a large skillet

Pour Jello syrup over apples in skillet

Add spices

Place skillet over medium heat and bring liquid to a boil

Cover

Reduce heat

Simmer apples 15 minutes or until tender

Remove cover

Place skillet under broiler about 2 inches from heat

Broil apples, basting frequently, 15 minutes or until apples are glazed and lightly browned

Serve warm or cool with syrup

Makes 6 servings

Note if apples are to be stored in refrigerator, pour syrup into a small pan and chill until set

Before serving, flake, rice or dice the set syrup and arrange around each serving

Spooky Fudge Treats


3 cups (18oz) semi-sweet chocolate chips

1 (14oz) can original or creamy chocolate sweetened condensed milk

1 tblp vanilla extract



Finely chopped nuts, flaked coconut, chocolate sprinkles, colored sprinkles, unsweetened cocoa or colored sugar



In heavy saucepan, over low heat, melt chips with Condensed milk

Remove from heat, stir in vanilla

Chill 2 hours or until firm

Shape into 1 inch balls,

Roll in any of the above coatings

Chill 1 hour or until firm

Store covered at room temperature



Put 2 together add licorice legs to make a spider

Roll in orange sprinkles to make a pumpkin

Roll in coconut add m&m eyes to make a ghost

Toasted Marshmallow Kebabs




1 box (4oz) large marshmallows

16 canned pineapple chunks

Or 4 canned cling peach halves, quartered

Or 4 small peeled bananas, each cut into 4 chunks

Or 2 large peeled oranges, each cut into 8 wedges



Thread a marshmallow on a long stick, with a piece of pineapple, peach, banana, or orange



Toast marshmallow and fruit over coals

Turn stick constantly until marshmallow and fruit are golden

Serve at once

Makes 16
