Creamy Lemon Asparagus Risotto




2 tbsp Olive Oil

1 medium onion, finely chopped

2 cups minute white rice, uncooked

1/2lb asparagus, cut into 2 inch pieces

2 cups chicken broth

2 tbsp Philadelphia light cream cheese spread

Grated peel and juice of 1/2a medium lemon



Heat the oil in a large skillet on medium heat

Add onion cook and stir 2 min or until tender



Stir in rice, asparagus and broth. Bring to a boil Reduce heat to low simmer 5 minutes



Add cream cheese spread, lemon peel and juice

Stir until well blended



Makes 6 servings

Lemony Potatoes

Ingredients :
2 pounds baking potatoes, peeled and cubed (1-inch pieces)
1 cup finely chopped onion
3 tablespoons butter
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper

Luscious Lamb




8 Lamb chops

Garlic powder to taste

2 tablespoons butter

2 tablespoons Worcestershire sauce

2 tablespoons lemon juice

2 tablespoons gin

1 teaspoon seasoned salt



Rub the lamb chops with a small amount of garlic powder and place in a shallow baking dish



Melt butter in a small saucepan



Stir in Worcestershire sauce, lemon juice, gin and seasoned salt



Pour over lamb



Cover and marinate in the refrigerator for 30 minutes



Remove the lamb and pour the marinade into a small sauce pan



Boil marinade for 10 minutes



Broil or grill the lamb chops to desired doneness



Serve the lamb topped with the marinade.

This dish serves 4

Banana-Sweet Potato Casserole




1 can (1 lb, 1 oz) sweet potatoes

2 large ripe bananas, peeled and quartered

1/4 cup orange juice or unsweetened pineapple juice

1/2 tsp salt

Dash pepper

1/4 cup butter or margarine

1/4 cup light brown sugar, firmly packed

2 tsp grated orange peel

2 tbsp chopped toasted almonds



Preheat oven to 400F

Arrange potatoes and bananas in an ungreased 10 x 6-1/2 x 1-1/2 inch baking dish



Pour orange juice over all, sprinkle with salt and pepper



In small bowl, mix butter, brown sugar, and orange peel with fork until mixture is crumbly

Sprinkle evenly over potatoes and bananas, sprinkle almonds over top



Bake, uncovered, 20 minutes

Delicious with ham or pork

Makes 4 to 6 servings

Hawaiian Sweet Potatoes




2 cans (1 lb, 7oz size) sweet potatoes, drained

1 can (9oz) crushed pineapple, undrained

6 tbsp butter or margarine, melted

3/4 tsp salt

Dash pepper

1/2 cup packaged dry bread crumbs

2 tbsp brown sugar

Dash cloves



Preheat oven to 375F

Mash potatoes in medium bowl, measure 4 cups

Stir in pineapple

2 tbsp butter, salt and pepper

Turn into 1 quart ungreased casserole

Combine remaining butter with bread crumbs, brown sugar,and cloves

Sprinkle over potato mixture

Bake 30 minutes

Makes 6 servings
