Syrups
Molasses is what remains after the granulated sugar has been removed from sugar cane. It comes in a light and in a dark form and should be stored in a tightly closed jar in a cool place. Unsulfured molasses is preserved, but is a purer, unrefined molasses. Blackstrap is also unrefined but to some it has an unpleasant bitter taste.
Corn Syrup is available light and dark, and the difference is an intensity in flavor. Used exclusively in desserts- the recipes will indicate which kind is called for
Honey has different flavors, depending on the kinds of flowers the bees have frequented. It comes in three forms. strained and clear, unstrained and thick and in the edible comb. Thick honey is grand to spread on toast
Maple Syrup is boiled-down maple sap. Keep in the refrigerator. It will turn dark after a while, but this will not affect its flavor. Pure maple syrup is expensive. If you read the labels carefully of less expensive syrups, you'll see that they are ususally a mixture of syrups with some maple added in.
