Staples - about Soybean Curd



Soybean Curd - as the name indicates, a bland cheeselike curd made from soybeans. Also known as tofu, it comes in white, square cakes and should be kept in a cold water in the refrigerator; if the water is changed daily, it will keep up to a week. It is especially high in protein and is used a lot in Oriental cooking.
