Back in the days when our country was more rural and people really lived off their land, the practice of 'putting by' summertime produce for winter use was a necessity, not a luxury. Now, of course, with good, commercially canned and frozen products available just about everywhere, it isn't really essential for most of us to do our own preserving, pickling, and canning. Yet many people still do. not just those who are following thrifty, long established family habits but health-minded young cooks who are wary of chemical preservatives in commercial products.
