| Crystallize your Own Ginger 2 cups of 1/4 inch thick slices of peeled or scraped gingerrootWater1-1/2 cups sugar1/2 lemon, sliced1 cup light corn syrup 1st day:Cover the ginger with water in a saucepan and bring slowly to a boil. Cover and simmer gently until tender, about 20 minutes. Add 1/2 cup sugar, stir well, and return to a boilRemove from the heat.Let stand, covered, at room temperature overnight 2nd day:Bring to a boil, reduce the heat, and simmer gently for 15 minutes. Add the sliced lemon and the corn syrup. Simmer uncovered for 15 minutes more. Stirring occasionallyRemove from the heat, cover, and let stand overnight. 3rd day:bring to a boil, stirring often. Stir in 1/2 cup of sugar, bring to a boil, reduce the heat, and simmer gently for 30 minutes. Stir in the rest of the sugar and bring to a boil. Remove from the heat and let stand overnight. 4th day:Bring to a boil. When the syrup drops heavily from the side of the spoon and the ginger is translucent, remove from heat and drain. Save syrup, it makes a delicious sauce.Dry ginger slices on a wire rack overnight. When its well dried, roll the ginger in granulated sugar and store in tightly covered glass jars. | |
