Saffron

is the stamen from the crocus.
It gives a beautiful yellow color and lovely flavor to rice and other dishes, but never use more than is called for. Although good saffron is very expensive, don't settle for the cheaper varieties. Buy it in threads, rather than ground, for fresher flavor. Before using it, saffron must be steeped in hot liquid to bring out its flavor.
