Old Fashioned Horehound Candy
This candy is bittersweet in flavor, and it is not to everyone's liking
But to some it has delightful flavor that recalls childhood joys
Those who like horehound have a real passion for it.
3 quarts water
1 oz (1/4 cup) dried horehound leaves, flowers, and stems
3 cups brown sugar
1 tsp cream of tartar
1/4 cup rum, or 1 tsp lemon juice
1 tsp butter
Superfine sugar
Bring water to a boil
Remove from heat, add horehound, and let steep for 30 minutes
Strain and let settle
For each batch of candy, pour 2-1/2 cups of liquid into a heavy saucepan
To it add sugar, cream of tartar, rum or lemon juice, and bring to boiling
When syrup reaches 240 degrees, add the butter.
Continue boiling without stirring until syrup reaches 312 degrees.
Pour into a shallow buttered pan
Let cool until you can handle, then shape into small candies, roll in superfine sugar, wrap each one in waxed paper, and pack in decorative tins
Makes about 25 candies.
