| Thought for the Day: Just because we are moving swiftly doesn't mean we are going anywhere. *************************** I finally remembered my nic and password! Let's hope that memory holds!!!!! It was somewhat overcast when I got outta bed around 8:30. The Sun came out for about 15 seconds, then it clouded over, poured rain, complete with thunder & lightening...now it has cleared again and the sky is blue with big fluffy white clouds..[edit here>>>>.....the sky is now overcast again and the grey clouds are steaming in!]......BUT the weather channel says we have 60% chance for more rain....! IF ya don't see me for a few days, it will because I am busy assembling my very "own" Arc!
Whatever was the cause of Harley-dog vomiting & runs....seems to of been treated by the medication the vet gave me on July 16th. to administer to her twice-daily.
[I have a pet that appears to be totally "into the drugs" she got from the vet a little over a week ago! I swear she is addicted.....lolol.....she comes to me & lifts her head up & tilts it back,... so I can toss the 2 pills into the back of her throat! She swallows then walks away!!!!! I have never seen anything like it.]
Not a whole lot happening here today, a little 'putor, a little television, a lotta supper, a little more television, then BED!
-I had this all filled out and was only a hair away from posting it when my "spastic" hand sqeeeeezed the mouse the sucker vanished! soooooo this is what ya get! Maybe another day,.... I will have better luck. Whatever you attempt today.....make it count! Like a Friend of mine says...."Make a memory"!

Carol/CSW/cas *********** -Corn and Zucchini Casserole
2 (10 oz.) pkgs. kernel corn, defrosted 6 sm. zucchini, cut in 1/2 inch slices 4 ripe tomatoes, cut in 1/4 inch slices 2 onions, thinly sliced 2 cloves garlic, crushed 1 tsp. red pepper, crushed Juice of 1/2 lemon 4 low sodium bouillon cubes, melted
Place first 6 ingredients in a covered casserole. Sprinkle with lemon juice and mix together gently. Pour cubes over vegetables. Cover and bake in a preheated oven at 325 degrees for 45 minutes. ********* Zucchini Cobbler
Crust: 4 cups all purpose flour 2 cups sugar 1 1/2 cups cold margarine or butter 1 teaspoon ground cinnamon
Filling: 8 cups peeled, shredded zucchini 2/3 cup lemon juice 1 cup sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg
For filling: In a large saucepan, over medium low heat, cook and stir zucchini and lemon juice for 5 to 10 minutes or until zucchini is tender. Add sugar, cinnamon and nutmeg; simmer 1 minute longer. Remove from the heat; set aside.
For crust: Combine flour and sugar in a bowl/ cut in margarine until mix resembles coarse crumbs. Stir in 1/2 cup zucchini mixture. Press half of crust mixture into a greased 15 x 10 by 1 inch pan. Spread zucchini over top; crumble remaining crust mixture over zucchini. Sprinkle with cinnamon. Bake at 375F for 35 to 40 minutes or until bubbly. ********** Cheese Zucchini Crisps
1/3 cup Cornflake crumbs 2 tablespoons grated Parmesan cheese 1/2 teaspoon seasoned salt dash garlic powder 4 small unpeeled zucchini, cut in 1/2 inch strips 1/4 cup melted butter
Combine crumbs, cheese and seasonings; place in a plastic bag. Dip zucchini strips in butter and shake in the crumbs to coat. Place on a baking sheet; bake 375F for 10 minutes or til crisp. 4 servings. ********** Orange Zucchini Cake
1 c. all-purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 3/4 c. sugar 1/2 c. vegetable oil 2 eggs 1/2 c. All Bran cereal 1 1/2 tsp. grated orange peel 1 tsp. vanilla 1 c. grated zucchini 1/2 c. chopped nuts 1/2 to 3/4 c. raisins (opt.)
Combine flour, baking powder, soda, salt, cinnamon and nutmeg. Set aside. In large bowl, beat sugar, oil, eggs until well combined. Stir in cereal, peel, vanilla. Add flour mixture, zucchini and nuts. Mix well. Spread evenly in greased 10 x 6 x 3 inch (1 1/2 quart) glass baking dish. Bake at 325 degrees for 35 minutes or until wooden pick inserted near center comes out clean, cool completely. Spread with orange-cream cheese frosting. Yield: 12 servings. -***************** Enjoy!
