Christmas Cheese Ball
2 pkg (8oz each) cream cheese, softened
2 cups (8 oz) shredded sharp cheddar cheese
1 tbsp finely chopped onion
1 tbsp diced pimientos
1 tbsp diced green pepper
2 tsp Worcestershire sauce
1 tsp lemon juice
Chopped pecans, toasted
Assorted crackers
In a mixing bowl, combine cream cheese, cheddar cheese,
Onion, pimientos, green pepper, Worcestershire sauce and
Lemon juice, mix well
Shape into two balls, roll in pecans, Cover and chill
Remove from the refrigerator 15 minutes before serving
Serve with crackers
Yield 2 cheese balls

Classic Cheddar Cheese Ball
Serves 15 to 20
2 cups shredded extra-sharp cheddar cheese
8 oz cream cheese, softened
2 tbsp mayonnaise
1 tbsp Worcestershire sauce
1 garlic clove, minced
1/4 tsp cayenne pepper
1/2 cup sliced almonds, toasted
Toss everything into the food processor (except toasted almonds)
Whirl around till everything is mixed
Spoon it out on to some plastic wrap then gather the sides and roll
Into a ball, twist the top around to seal
Place in the refrigerator for up to 3 hours to firm up (can be
Refrigerated for up to 2 days)
Take the cheese ball out of the fridge, Smooth it up a bit
(Into a smooth round ball)
Take it out of the plastic wrap and roll in the Toasted Almonds
Let sit at room temperature for 15 minutes and serve

Chestnut Balls
Boil, hull, and blanch enough Spanish or Italian Chestnuts to
Measure a cupful when mashed smooth, or run through the ricer.
Put into the double boiler
1 cup sweet milk
1 tablespoon butter
1/2 teaspoonful grated onion
1/2 cup ground bread crumbs
Salt and pepper to taste
Stir until thick remove from fire and add the chestnuts
When cold, form into balls the size of a walnut
Dip in egg,
Then in cracker crumbs,
And fry in deep fat.

Mexicali Cheese Ball
Serves 15 to 20

3 tbsp salsa
2 tbsp minced fresh cilantro
1 garlic clove, minced
1/2 cup blue corn tortilla chips, crushed
Toss everything into the food processor (except the torilla chips)
Whirl around till everything is mixed
Spoon it out on to some plastic wrap then gather the sides and roll
Into a ball, twist the top around to seal
Place in the refrigerator for up to 3 hours to firm up
(Can be refrigerated for up to 2 days)
Take the cheese ball out of the fridge, Smooth it up a bit
(Into a smooth round ball)
Take it out of the plastic wrap and roll in the tortilla chips
Let sit at room temperature for 15 minutes and serve

Port Wine-Blue Cheese Ball

1 cup crumbled blue cheese
1 cup shredded mozzarella cheese
8 oz cream cheese softened
2 tbsp mayonnaise
1 tbsp port wine
1 garlic clove, minced
1/2 cup pecans, toasted and chopped fine
Toss everything into the food processor (except the Pecans)
Whirl around till everything is mixed
Spoon it out on to some plastic wrap then gather the sides and roll
Into a ball, twist the top around to seal
Place in the refrigerator for up to 3 hours to firm up
(Can be refrigerated for up to 2 days)
Take the cheese ball out of the fridge, Smooth it up a bit
(Into a smooth round ball)
Take it out of the plastic wrap and roll in the Pecans
Let sit at room temperature for 15 minutes and serve

2 cups shredded dill Havarti cheese
8 oz cream cheese, softened
2 tbsp mayonnaise
4 oz smoked salmon, chopped
1 shallot, minced
1 tsp lemon zest plus 1 tbsp juice
1/2 cup minced chives
Toss everything into the food processor (except the Chives)
Whirl around till everything is mixed
Spoon it out on to some plastic wrap then gather the sides and roll
Into a ball, Twist the top around to seal
Place in the refrigerator for up to 3 hours to firm up
(Can be refrigerated for up to 2 days)
Take the cheese ball out of the fridge, Smooth it up a bit
(Into a smooth round ball)
Take it out of the plastic wrap and roll in the Chives
Let sit at room temperature for 15 minutes and serve
