Fried Camembert Cheese
Served in Restaurants all over the world
1 small Camembert cheese, about 2/3 lb
6 tbsp all purpose flour
Dash of salt
1 egg
6 tbsp fine white bread crumbs
Oil, for frying
Parsley, for serving
Keep cheese refrigerated until ready to use
Cut cheese into even wedges
Combine flour and salt
Beat egg
Place flour mixture, beaten egg and bread crumbs on small
Individual plates
Dip cheese first in flour, then in beaten egg and finally in bread crumbs
Heat oil gradually, using a deep frying thermometer to determine
Desired temperature
It should read 365F to 370F
Fry cheese, a few wedges at a time, until golden brown and crispy
Remove with a slotted spoon and place on double layers of paper
Towels for fat to drain
If desired, fry a few sprigs of parsley in the oil and serve with
The cheese wedges
Rinse parsley well, shake off excess moisture and pat dry
Fry for a few seconds
Serve with Red wine
