Canapé Butters
For Crackers & Dark Breads

Cheddar Cheese Butter
Beat
1/2 cup cheddar cheese until creamy about 3 minutes
Add 2 tbsp soft butter and
2 slices crumbled, crisp fried bacon
Beat only until thoroughly blended
Add a little salt if necessary

Garlic and Parsley Butter
Beat
1/2 cup firm butter until it has the consistency of whipped cream
Add 2 tbsp coffee cream
1/4 tsp garlic powder
1/4 tsp table salt
1/4 cup minced parsley

Pimento Butter
Beat
1/2 cup firm butter until it has consistency of whipped cream
Add 1/4 cup canned pimento that has been put through a sieve
Or food processor
Add 1/4 tsp celery salt
1/4 tsp onion salt
1/4 tsp table salt
Beat until thoroughly blended

Horse-Radish Butter
Beat
1/2 cup firm butter about 3 minutes
2 tbsp cold coffee cream
3 tbsp prepared horse-radish
1/2 tsp salt
Beat until well blended

Pecan Butter
Beat
1/2 cup firm butter about 3 minutes
1/2 cup cream cheese that has been mashed with a fork
1 cup fine-chopped pecans
1 tsp salt
Beat until thoroughly blended

Olive Butter
Beat
1/2 cup firm butter 3 minutes
2 tbsp cold coffee cream
3 tbsp fine-chopped or minced green pimento stuffed olives
Beat until well blended
