Avocado Boats
6 hard cooked eggs, chopped
3 tbsp finely chopped green onions
3 tomatoes, peeled, seeded and chopped
6 avocados, halved and pitted
6 tblsp mayonnaise
1-1/2 tblsp fresh lemon juice
3 tsp prepared mustard
3/4 tsp salt
Several drops Tabasco pepper sauce
Lettuce, washed, dried and chilled
6 slices bacon, crisp-cooked drained and crumbled
Combine eggs, onions and tomatoes
With melon-baller, carefully scoop out avocado halves leaving
Firm shells
To the avocado balls, add the remaining ingredients, except
Lettuce and bacon
Add egg mixture, folding carefully so as to keep avocado from
Breaking up
Spoon into avocado shells
Serve on lettuce bed
Sprinkle top of each boat with crumbled bacon
