Basic Griddlecake Batter

1 cup sifted all purpose flour
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar
1 egg
1 cup milk
3 tbsp butter or margarine, melted
Sift flour with baking powder, salt, and sugar into medium bowl
With rotary beater, beat egg
Add milk and butter, beat until well mixed
Pour into dry ingredients; beat only until combined batter will be lumpy
Meanwhile, slowly heat griddle or heavy skillet
Use about 1/4 cup batter for each griddlecake
Cook until bubbles form on surface and edges become dry
Turn, cook 2 minutes longer, or until nicely browned on underside
Serve with Whipped Butter and any Syrup

Honey & Spice Griddlecake Batter

1 cup sifted all purpose flour
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar
3/4 tsp cinnamon
1/4 tsp ginger
1/8 tsp nutmeg
1/2 cup uncooked, quick cooking oats
2 tbsp honey
1 egg
1 cup milk
3 tbsp butter or margarine, melted
Sift flour all dry ingredients into medium bowl add Quick Oats
With rotary beater, beat egg
Add milk and butter, and Honey beat until well mixed
Pour into dry ingredients; beat only until combined batter will be lumpy
Meanwhile, slowly heat griddle or heavy skillet
Use about 1/4 cup batter for each griddlecake
Cook until bubbles form on surface and edges become dry
Turn, cook 2 minutes longer, or until nicely browned on underside
Serve with Whipped Butter and any Syrup

Sweet Milk Griddle Cakes

1 cup milk
1 egg
1 cup flour
2 teaspoons baking powder
1 teaspoon butter
1/4 teaspoon salt
Beat the egg well; add the milk and the butter melted.
Sift the flour, baking powder and salt, and stir all together to make a smooth, thin batter.
If batter is too stiff, add a little more milk
Heat and grease an iron griddle
Spoon off batter into hot griddle
Bake until the cake is full of air bubbles, turn over with a pancake turner and brown on other side
Remove all drippings after each cake is browned and wipe griddle off with waxed paper or greased cloth
Serve hot with butter and syrup

Old Fashioned Flapjacks

3 eggs
1 cup sifted all purpose flour
3 tsp baking powder
1/2 tsp salt
2 tsp granulated sugar
1 tsp light brown sugar
1/2 cup buttermilk
2 tbsp butter or margarine, melted
In large bowl of electric mixer, at high speed, beat eggs until light and fluffy about 2 minutes
Into eggs, sift flour with baking powder, salt and granulated sugar
Add brown sugar beat until smooth
Stir in buttermilk and butter just until combined, do not over beat
Meanwhile, slowly heat griddle or heavy skillet
Use 1/4 cup batter for each flapjack, cook until bubbles form on surface and edges become dry
Turn cook 2 minutes longer, or until nicely browned on underside
Serve with Whipped butter and Syrup
Makes 8 (4 inch) Flapjacks

SOURDOUGH HOTCAKES


2 cups sourdough starter *(check the bread recipes for the Starter)
2 tablespoons sugar
4 tablespoons oil
1 egg
1/2 teaspoon salt
1 scant teaspoon baking soda; full teaspoon
if starter is real sour.

In a bowl mix starter, sugar, egg and oil.
Mix well. Add soda the last thing; when
ready for batter to hit the griddle. Dilute
soda in 1 tablespoon of warm water. Fold
gently into sourdough. Do not beat. Notice
deep hollow tone as sourdough fills with
bubbles and doubles in bulk. Bake on hot
griddle to seal brown. Serve on hot plates.

Shrimp Hotcakes

2 cans (4 1/2 ounces) Shrimp
1 3/4 cups sifted flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons curry powder
1/4 teaspoon pepper
2 eggs, beaten
1/3 cups milk
1/3 cup salad oil
Rinse shrimp with cold water, drain, chop coarsely.
Sift dry ingredients.
Stir in liquid ingredients and shrimp.
Bake on preheated lightly greased griddle.
Make 15 four - inch cakes
Tomato Sauce for Shrimp Hotcakes
1 can condense cream of tomato soup
1/4 cup butter
1/2 cup light cream
Heat together until butter melts.
