| Basic Griddlecake Batter 1 cup sifted all purpose flour2 tsp baking powder1/2 tsp salt2 tbsp sugar1 egg1 cup milk3 tbsp butter or margarine, meltedSift flour with baking powder, salt, and sugar into medium bowlWith rotary beater, beat eggAdd milk and butter, beat until well mixedPour into dry ingredients; beat only until combined batter will be lumpyMeanwhile, slowly heat griddle or heavy skilletUse about 1/4 cup batter for each griddlecakeCook until bubbles form on surface and edges become dryTurn, cook 2 minutes longer, or until nicely browned on undersideServe with Whipped Butter and any Syrup | |

| SOURDOUGH HOTCAKES
2 cups sourdough starter *(check the bread recipes for the Starter) 2 tablespoons sugar 4 tablespoons oil 1 egg 1/2 teaspoon salt 1 scant teaspoon baking soda; full teaspoon if starter is real sour. In a bowl mix starter, sugar, egg and oil. Mix well. Add soda the last thing; when ready for batter to hit the griddle. Dilute soda in 1 tablespoon of warm water. Fold gently into sourdough. Do not beat. Notice deep hollow tone as sourdough fills with bubbles and doubles in bulk. Bake on hot griddle to seal brown. Serve on hot plates. | |

| Shrimp Hotcakes 2 cans (4 1/2 ounces) Shrimp1 3/4 cups sifted flour1 tablespoon baking powder1/4 teaspoon salt1 1/2 teaspoons curry powder1/4 teaspoon pepper2 eggs, beaten1/3 cups milk1/3 cup salad oilRinse shrimp with cold water, drain, chop coarsely. Sift dry ingredients.Stir in liquid ingredients and shrimp.Bake on preheated lightly greased griddle.Make 15 four - inch cakesTomato Sauce for Shrimp Hotcakes1 can condense cream of tomato soup1/4 cup butter1/2 cup light creamHeat together until butter melts. | |
