Pralines (quick)

1 (4oz) pkg butterscotch pudding mix
1 cup sugar
1/2 cup brown sugar, firmly packed
1/2 cup evaporated milk
1 tbsp butter
1-1/2 cups pecans
Combine pudding mix, sugars and milk in a saucepan
Add butter and cook, stirring frequently, over low heat until mixture reaches the soft-ball stage (236)
Add nuts and remove from heat
Beat just until mixture begins to thicken
Drop by spoonfuls onto waxed paper
Makes 2 dozen pralines
