Cajun Pralines
Makes 3-1/2 dozen


2 cups granulated sugar
1 cup packed brown sugar
1 cup milk
1/2 cup (1 stick) butter
2 tablespoons corn syrup
4 cups pecan halves

Optional I like to add 1/4 teaspoon of cayenne pepper for a little kick

In a large heavy saucepan, combine the sugars, milk, and butter, and corn syrup, cayenne pepper if you want to try it, bring to a boil. Cook, stirring constantly, until the mixture reaches 225 on a candy thermometer. Add the pecans and continue cooking, stirring constantly, until the mixture reaches soft ball stage 236F. Remove from heat and beat vigorously until the mixture just begins to thicken. Working rapidly, drop by tablespoonfuls onto greased wax paper. Let stand until firm
Store in an airtight container
