Christmas Almond Brittle
Makes about 1-1/2 Pounds


1/4 cup sugar
1/2 cup honey
1/2 cup (1 stick) plus 2 tablespoons butter
1 pound almonds or walnuts, chopped (about 4 cups)

In a heavy skillet, heat the sugar over low heat until it has melted and is delicately browned. Watch carefully to see that it doesn't burn. Add the honey and butter, simmer for 20 minutes. Stir in the nuts and cook for 10 minutes. Line a platter or pan with wax paper and drop tablespoonfuls of the brittle onto the paper. Let the brittle harden.

Peanut Brittle
1 1/2 cups shelled peanuts
1/4 tsp salt
1 cup sugar
1/2 cup light corn syrup
1/2 cup water
1 1/2 tbsp butter
1/2 tsp lemon extract

Sprinkle nuts with salt and warm in oven
Put sugar, corn syrup, and water in pan.
Stir until it boils. Wash down sides with wet pastry brush and cook to 295F. Or until mixture is very brittle when tried in cold water
Add butter, lemon extract, and nuts
Pour into a shallow greased pan
As soon as it can be handled, turn the mass over and pull and stretch it out as thin as possible
Break into irregular pieces.

Peppery Peanut Brittle

1-1/4 cups salted dry roasted peanuts
1-1/2 tsp hot pepper sauce
1/4 tsp ground allspice
1 cup sugar
1/2 cup light corn syrup
1 tsp butter
1-1/2 tsp baking soda
1 tsp vanilla extract

Coat a 15x10x1 inch pan and metal spatula with nonstick cooking spray, set aside
In a large bowl, toss the peanuts, hot pepper sauce and allspice until evenly coated set aside

In a 2 quart microwave safe glass bowl, combine sugar and corn syrup
Microwave, uncovered on high for 4 minutes, stir
Add peanut mixture, stir until blended

Heat on high 4-5minutes longer or until mixture turns a light amber color (mixture will be very hot)
Stir in butter
Microwave 45 seconds, longer
Quickly stir in baking soda and vanilla until mixture foams and becomes light colored
Immediately pour mixture onto prepared pan and spread as thin as possible with prepared spatula
Cool
Bread into pieces
Yield about 1 lb

Sesame Brittle

Vegetable oil for coating the baking pan

3/4 cup sugar
1/2 teaspoon vanilla
3/4 cup toasted sesame seeds

Completely coat an 8 inch square baking pan with the vegetable oil

In a heavy saucepan melt the sugar over low heat, stirring, until it is clear and amber-colored. Off the heat, stir in the vanilla and sesame seeds.
Transfer the mixture to the baking pan, press it into an even layer with the back of an oiled tablespoon, and score it with an oiled knife into 1 to 2 inch squares. When the candy has hardened, invert it onto a work surface and break it where scored into squares.
Store in an airtight container.
Let sit for a least 1 week before eating
Makes about 1/2 pound
