Sweet Potato Biscuits
1 1/2 cups sifted enriched flour
2 tablespoons baking powder
3/4 teaspoon salt
1/2 cup chilled shortening
1 cup milk
1 1/2 cups mashed sweet potatoes
Mix and sift flour, baking powder, and slat.
Cut in shortening with a pastry blender or 2 knives
Combine milk and sweet potatoes. Add to flour shortening mixture and stir quickly
Knead lightly on board using as little flour as possible. Roll 1/2 inch thick cut with floured biscuit cutter.
Place on greased baking sheet. Bake in hot oven (425F) 12 to 15 minutes
Makes about 2 dozen
