Peanut Butter Oat Muffins

1-1/4 cups flour

3/4 cup quick cooking oats

3/4 cups brown sugar, firmly packed

3 tsp baking powder

1/2 tsp salt

Dash ground cinnamon

1 egg

1/4 cup peanut butter

1-1/4 cup peanuts, chopped

Whipped topping and additional peanuts (optional)

Preheat oven to 375

Grease a muffin tin or line with paper cups

Combine flour, oats, brown sugar, baking powder, salt and cinnamon

In another bowl, beat egg, peanut butter and milk until smooth

Stir in dry ingredients until moistened

Fold in peanuts

Fill muffin cups 3/4 full

Bake 15 to 18 minutes or until toothpick inserted into center comes out clean

Cool 5 minutes before removing from pan

Serve with whipped cream and nuts, if desired
