Christmas Bread (for the homeless)

Single recipe (yield: 10 loaves)
Dry Yeast, 3 tbs
Water, 5 cups
Sugar, 1 1/2 cups
Honey, approx. 12 oz
Eggs, 1 doz
Raisons, 4-5 cups,
mixed, black and white
Shortening, 1 stick
Flour, approx 5 lbs
10% whole wheat,
15% semolina
75% unbleached, organic white
Salt, small handful

Mix to right "feel", not too stiff,
Rise in proof box 1/2 hr or so.
Make into 10 equal small round loaves.
Bake in convection oven for approx 1/2 hr
at 325, until dark brown and feels solid
with finger tap, or passes toothpick test.

Delicious, long lasting, nutritional bread to
give to homeless at Christmas time.


Triple Recipe (yield: 30 loaves)
Dry yeast, 10 tbs
Water, 15 cups
Sugar, 6 cups
Honey, approx 10 oz.
Eggs, 3 dozen

Raisons, 15-16 cups,
mixed, black and white
Shortening, 3 sticks
Flour, approx 15 lbs
(same % as above)
Salt, large handful

Makes great gifts, especially for the homeless.
Rewarding spiritual experience. In
Pittsburgh
, It took
7 of us just 6 hours to make 180 loaves. Enjoy!)
