Poor Man's Bread


8cups distilled water (or tap)
5 pounds stone-ground whole wheat flour
1 tsp yeast

Warm water, mix in the yeast and half of the flour. Cover and allow to sit to make a sponge (about 4-6 hrs). Punch down and knead, mixing in additional flour. Let rise in an oiled, covered pan overnight in a cool place.
Shape in to rounds or loaves. Cover and let rise until it doubles in size. Bake at 350 degrees for approximately 50 minutes.


I noticed a message from someone who wanted a recipe for sugar-free whole wheat bread. If you are familiar with your bread machine, it shouldn't be very hard to adapt this recipe.
