| Molasses Oatmeal Bread (great for Sandwiches) 2 cups boiling milk1 cup rolled oats, quick or old fashioned1 tbsp shortening1/3 cup dark molasses1 tsp salt2 pkg active dry yeast1/2 cup water, 105-115F4-1/2 to 5 cups bread flour or all purpose flour2 tbsp molasses, for glaze In a large bowl, pour milk over rolled oatsAdd shortening, molasses and salt Let cool to lukewarm In a small bowl, dissolve yeast in warm waterAdd to cooled oat mixtureStir in flour to make stiff dough On floured board, knead dough until smooth and satiny, adding flour as needed Place dough in large bowl, coverLet rise in warm place until doubled, about 1 hour Turn dough onto lightly oiled surfaceDivide in half.Shape each half into a loafPlace on greased baking sheet, smooth side upLet rise in a warm place for 45 minutes, or until almost doubledPierce all over with fork Brush loaves with warm waterBake at 350 for 30 to 35 minutes or until goldenBrush immediately with molassesCool on rack Calories per slice 130carbs 25g | |
