6 egg yolks

6 tbsp granulated sugar 3/4 cup Marsala wine



In a saucepan, beat egg yolks and sugar until very light and fluffy

In another saucepan, heat wine just to the boiling point (do not boil)

Add hot wine to egg mixture

Beat vigorously

Place saucepan in another pan with hot water

Continue beating until thick and glossy

Beat constantly while cooking, and do not allow the sauce to boil or it will curdle immediately

Continue beating while sauce cools slightly

Serve warm or cold



You can use orange juice instead of wine
