| Pesto 2 cups basil leaves2 medium cloves garlic1/2 cup grated Parmesan cheese2/3 cup olive oil2 tablespoons unsalted butter, softened1/4 cup pine nuts1 teaspoon saltFreshly ground pepperCombine all the ingredients in a food processor or blender and puree until smooth.Pour into a glass jar or container and chill, covered.Pesto freezes well.
