Boar's Head Carol The boar's head in hand bring I Bedecked with bays and rosemary And I pray you my masters Merry Be Quot estis in convivio (All who are feasting) Caput apri defero (The head I bring) Reddens laudes Domino (Giving praises to God) The boar's head I understand Is the rarest dish in all this land Which thus bedecked with a garland gay Let us servire cantico (Let us serve with a song'.) The Wild Boar, worshipped by the Druids in England and offered as a sacrifice to their goddess Frigga, symbolized the ploughing of the Fields because of its tusks, which it dug into the earth. Since the time of Henry VIII, Boars Head has been the "piece de resistance" at many an English Holiday Meal. Many traditions surround it. Guests at the dinner table sing when it is brought in. A popular song is the "Boar's Head Carol"

An arrangement by Mykola Leontovych [1875-1921] was popularized in the 1930's by Oleksander Koshyts [1875-1944], a Ukrainian choir director who worked in the US and Canada. It has since become an American Christmas classic.

Christmas For Cowboys Tall in the Saddle we spend Christmas Day Driving the Cattle on the Snow-Covered Plains. All of the good gifts given today; Ours is the sky and wide open range. Back in the cities, they have different ways. Football and Eggnog and Christmas Parades. I'll take the blanket; I'll take the reins; Christmas for Cowboys and wide open plains. A campfire for warmth as we stop for the night; The stars overhead are the Christmas-Tree Lights; The wind sings a hymn as we bow down to pray' Christmas for Cowboys and the wide open plains. It's tall in the saddle we spend Christmas Day, Driving the Cattle on the Snow-Covered plains. So many gifts have been opened today; Ours is the sky and the wide open range. CHRISTMAS DINNER
And it came to pass on a Christmas Evening While all the doors were shuttered tight Outside standing, lonely Boy-Child Cold and shivering in the night
On the street, every window Save but one, was gleaming bright And to this window walked the Boy-Child Peeking in saw, candle light
