| Sand Cake This cake has a fine grainy texture1 cup butter1 cup sifted sugarGrated rind of 2 large lemons (1 tbsp)6 eggs, separated2 tbsp lemon juice or 2 tbsp brandy or rum1 cup sifted cornstarch1-1/2 tsp baking powder1/2 tsp saltPreheat oven to moderate 350Cream butter until very soft and fluffyBeat in sugar, 2 tbsp at a time, beating well after each additionStir in lemon rindBeat egg yolks until light; add to butter-sugar mixture, blending thoroughlyBeat in lemon juice or brandySift together flour, cornstarch, baking powder, and salt, stir into batterBeat again with electric mixer 5 minutes, or by hand 15 minutesBeat egg whites until they stand in stiff peaks, fold into batterGenerously grease and flour a 9 inch angel cake panPour in batterBake on center rack of oven 45 minutes, or until cake tester inserted near center comes out cleanCool 5 minutesLoosen cake around edge and turn out onto a wire rack to coolNote this cake is not usually iced. But if an icing is desired, use this oneLemon GlazeTo 1 cup sifted confectioners sugar add 2 tbsp lemon juiceStir until smoothThe glaze should be thin and tart | |
