Mincemeat Cake
1/2 cup shortening
1-1/3 cups sugar
2 eggs, well beaten
1 cup mince meat
2 cups flour
1-1/2 tbsp cocoa
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/3 cup walnuts
Cream shortening, add sugar gradually and mix well
Add eggs, thoroughly beaten
Heat mincemeat until suet is melted and it contains no lumps of fat; add to creamed mixture while warm
Sift flour and measure
Sift again with other dry ingredients then add alternately with milk
Stir in nuts
Bake in 2 greased layer pans for 30 to 35 minutes or in a 8x8x2 for 50 minutes
