| Meringue Layer Cake 3 oz almond paste2 tbsp milk4 egg whites1/3 tsp cream of tartar1 cup granulated sugar Cherry Filling1 pkg unflavored gelatin1-1/3 cups whipping cream3/4 cup cherry pie filling or cherry preserves3 tbsp cherry liqueurPowdered sugar for garnishMelted chocolate, for garnish Grate almond pasteBlend with milk and stir until smoothBeat egg whites until stiff peaks formAdd cream of tartar and sugar, a little at a time, and continue beating until mixture is glossyMix half of the beaten egg whites with the almond pasteStir to blendThen add the remaining egg whites Grease and flour parchment paperPlace on a baking sheetWith a plate as a pattern, make two circles, about 8 inches each, on parchmentSpread meringue mixture evenly on paper Bake meringue layers at 325F for about 30 minutes or until layers are dry and lightly brownedInvert layers onto a rackRemove paper from bottom of layers For FillingDissolve gelatin according to pkg directions Whip cream until stiff peaks formAdd gelatin and gently fold in cherry filling or preserves and liqueur Spread the cream filling over one of the meringue layersCover with the second layerSprinkle top of cake with powdered sugar and drizzle with a little melted chocolateRefrigerate for about 30 minutes before serving | |
