Coffee-Spice Cake



3 cups unsifted flour

2 tsp baking powder

1 1/2 tsp salt

3/4 tsp cinnamon

1/2 tsp cloves

1/4 tsp allspice

3 tbsp Instant coffee

1/4 cup boiling water

3/4 cup butter, softened

1 1/2 cups sugar

3 eggs

1 1/2 tsp vanilla extract

1 1/4 cups milk



Preheat oven to 375F. In small bowl, combine flour, baking powder, salt, cinnamon, cloves and allspice, set aside.

Dissolved Instant coffee in boiling water, set aside. In large bowl, combine butter and sugar; beat until creamy.

Beat in eggs and vanilla extract

Gradually add flour mixture alternately with milk and dissolve coffee.

Pour into 2 greased and floured 9" round layer cake pans

Bake at 375F Time 25 minutes

Cool, remove from pans.

Frost with Coffee Cream Frosting, Garnish top with almonds.





Coffee Cream Frosting



1 cup heavy cream

1/4 cup sifted confectioner’s sugar

2 tsp Instant Coffee

1/2 cup sliced blanched almonds toasted



In small bowl, combine heavy cream, confectioner’s sugar and instant coffee beat until thick.
