Devils Food Pound Cake

1 pkg Dunkin Hines Devils Food Cake Mix
1 pkg Chocolate Instant Pudding Mix (servings 4)
½ cup Crisco oil
1 cup water
4 eggs

Blend all ingredients in a large bowl, and then beat at medium speed. For 2 minutes
Bake in a greased and floured 10inch tube pan at 350 for about 50 to 60 minutes
Until center springs back when touched lightly
Cool right side up for about 25 minutes then remove from pan.

Mocha Velvet Cake
Debbie’s Recipe

1-(8oz) bakers angel food cake about 1 lb
¼ cup water
¼ cup sugar
8 square’s (1oz each) semi sweet choc
1 cup heavy cream whipped
3 tbsp butter or margarine
3 eggs separated
½ cup apricot rumor orange juice
1 tbsp instant coffee
Whipped cream

With sharp knife, cut down into cake ½ inch from outer edge, cutting not quite through to bottom
With the help of a spoon of small knife, remove cake part in center, leaving a shell ½ inch thick, fill hole in bottom with a round slice cut from removed cake, (save the crumbles)
Melt choco and butter in top of double boiler over hot not boiling water. Stir to blend
Remove
Beat yolks into choco, one at a time, beating well
Dissolve coffee in ¼ cup water and add to choco,
Set to cool
Beat whites till foamy and double in volume, add sugar one tablespoon at a time, beating till meringue stands in firm peaks
Fold into cooled choco
Until no steaks of white remain
Fold in whipped cream
Spoon into cake shell
Chill at least 6 hours or overnight
Heat apricot preserves in small saucepan till bubbly
Press through a strainer
Stir in rum or orange juice
Brush over side of cake
Pipe small rosettes of whipped cream around top edge and base of cake, if you wish.

Mocha-Cinnamon PoundCake

2-1/2 cups sifted all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 cup soft butter or margarine
1-3/4 cups sugar
3 eggs
2 tsps vanilla extract
3 envelopes (1 oz size) no melt unsweetened chocolate
1 cup milk
1 tbsp instant coffee
2 tsps cinnamon

Preheat oven to 350
Grease well and flour a 10 by 4 inch tube pan
Sift flour with baking powder, baking soda, and salt, Instant Coffee and Cinnamon, set aside
In a large bowl of electric mixer, at medium speed, beat butter and sugar until light and fluffy
Add eggs and vanilla beat until very light and fluffy
At low speed, add chocolate, beating just until blended
Beat in flour mixture in 4th's alternately with milk in 3rd's, beginning and ending with flour mixture, beat just until combined
Pour batter into prepared pan bake 60 to 65 minutes, or until cake tester inserted in center comes out clean
Cool in pan, on wire rack, 15 minutes
Then turn out on rack cool completely
To serve, cut thinly into 16 slices

Malted Milk Cake

Cream 1/2 cup butter,
Add 1 cup sugar gradually
Beat in 1 egg
Then add 3 heaping teaspoons chocolate malted milk
1/2 teaspoon vanilla
1/4 teaspoon salt
Add 1 teaspoon soda to 1 cup sour milk
And then add alternately with 2 cups sifted flour to the first mixture
Bake in buttered layer cake pans
Put together and cover with white icing
