Vermont Snowballs

Cooking spray
1 cup butter or shortening
2 tbsp.
Vermont maple syrup
2 eggs
1 tsp. vanilla
3/4 cup sugar
1/2 cup brown sugar
2 to 2 1/2 cups self-rising flour
3/4 cup walnuts, chopped
3/4 cup pecans, chopped
Powdered sugar
Cinnamon-sugar (optional)
Colored sugar (optional)
Preheat oven to 350 degrees. Grease cookie sheets with cooking spray.
With a mixer, blend shortening, maple syrup, egg and vanilla until
creamy. Add sugar and brown sugar. Gradually add flour to mix, and
then stir in nuts by hand. Using a tablespoon or melon-ball scoop,
remove a small portion of dough and form into a ball. Roll the ball
in powdered sugar until covered. Place on cookie sheet and bake for 8
to 12 minutes (depending on size of cookie) or until edges start to
brown. Let cookies cool until warm. Roll in more powdered sugar. For
additional decoration, sprinkle with cinnamon-sugar or colored sugar
after baking.

Serves how many: Makes about 3 dozen cookies
