SugarPlum Squares




1 cup all purpose flour

1 1/4 cups granulated sugar

1/3 cup butter or margarine, room temperature

2 eggs

2 tablespoons all purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 tablespoon grated orange peel

2 tablespoons orange juice

1/2 cup raisins

3/4 cup chopped walnuts

1 cup flaked or shredded coconut

Powdered Sugar



Preheat oven to 350

Grease an 8 or 9 inch square baking pan.

In medium bowl, beat together 1 cup flour, 1/4 cup granulated sugar and butter or margarine until well blended.

Press mixture evenly in bottom of greased baking pan

Bake 15 minutes or until very lightly browned. Meanwhile, in a medium bowl beat together eggs, remaining 1 cup granulated sugar. 2 tablespoons flour, baking powder and salt until smooth. Stir in orange peel, orange juice, raisins, walnuts and coconut.

Pour mixture over hot baked layer. Spreading evenly

Bake 20 to 25 minutes or until lightly browned.

Cool in pan.

Cut cooled cookies into squares.

Sift powdered sugar over top

Makes about 25 (1 1/2 inch) cookies.
