| Spice Cookies with Pumpkin Dip 1-1/2 cups butter, softened2 cups sugar2 eggs1/2 cup molasses4 cups all purpose flour4 tsp baking soda2 tsp ground cinnamon1 tsp ground ginger1 tsp ground cloves1 tsp saltAdditional sugar Pumpkin Dip1 pkg (8 oz) cream cheese, softened2 cups canned pumpkin pie mix2 cups confectioners’ sugar1/2 to 1 tsp ground cinnamon1/4 to 1/2 tsp ground ginger In a mixing bowl, cream butter and sugarAdd eggs, one at a time, beating well after each additionAdd molasses, mix wellCombine flour, baking soda, cinnamon, ginger cloves and saltAdd to creamed mixture and mix wellRefrigerate overnight Shape into 1/2 inch balls, roll in sugarPlace 2 inches apart on ungreased baking sheetsBake at 375 for 6 minutes or until edges begin to brownCool for 2 minutes before removing to a wire rack For dip, beat cream cheese in a mixing bowl until smoothAdd pumpkin pie mix, beat wellAdd sugar, cinnamon and ginger, beat until smoothServe with cookiesStore leftover dip in the refrigeratorYield about 20 dozen (3 cups dip) | |
