Mexican ThumbPrints

The custard filling bakes in these rich and luscious party cookies


1 egg yolk

1 tbsp sugar

1 tbsp flour

1/4 tsp vanilla

Dash of salt

1/2 c heavy cream

1 c butter

1/2 c sugar

2 egg yolks

1 tsp vanilla

2-1/4 c sifted flour

1 tsp baking powder

1/8 tsp salt



To make Filling

Blend 1 egg yolk with 1 tbsp sugar

1tbsp flour,

1/4 tsp vanilla

And a dash of salt in a double boiler

Add the cream gradually and blend well

Cook over water, stirring constantly, until custard is thick and smooth

Cover surface of custard with waxed paper or plastic wrap

Chill thoroughly



To make Cookies,

Beat butter until light

Gradually add 1/2 c sugar and beat until fluffy

Beat in 2 egg yolks and 1 tsp vanilla to blend well

Sift together 2-1/4 c flour, baking powder and 1/8 tsp salt

Mix into egg yolk mixture to blend thoroughly

Chill dough until easy to handle, at least 1 hour

Shape heaping teaspoonfuls of dough into balls place on ungreased baking sheet

With thumb, press medium size indentations in each dough ball

Put 1/4 tsp filling in each

Bake 350 for 13 to 15 minutes



Makes 4-1/2 dozen
