Lollipop Cookies




1 cup butter, softened

1-1/2 cups confectioner’s sugar

1 egg

1 tsp vanilla extract

1/4 to 1/2 tsp almond extract

2-1/2 cups all purpose flour

1 tsp baking soda

1 tsp cream of tartar

2 squares (1oz each) semisweet chocolate, melted



Frosting

1 cup confectioner’s sugar

1/4 to 1/2 tsp almond extract

1/4 tsp salt

1 to 2 tsp milk

Red hot candies and red sprinkles



In a large mixing bowl, cream butter and confectioners sugar.

Beat in egg and extracts

Combine the flour, baking soda and cream of tartar; gradually add to the creamed mixture

Divide dough in half, stir chocolate into one half

Refrigerate for 2 hours or until easy to handle



On a lightly floured surface, roll out each portion to 1/8 inch thickness

Cut with a 2-1/2 inch cookie cutter dipped in flour

Place 1 inch apart on lightly greased baking sheets

Bake at 375 for 7-8 minutes or until lightly browned

Remove to wire racks to cool



For Frosting

Combine the Sugar, extract, salt and enough milk to achieve spreading consistency

Frost chocolate cookies

Place a wooden stick in each cookie, leaving 3 inch for handle

Top each with a plain cookie

Frost tops

Sprinkle with candies

Yield 3 dozen






Milk Paint
Sweetened condensed milk
Assorted food colors
Empty Styrofoam egg carton

1. Place 1 tablespoon sweetened condensed milk in each compartment or container.
2. Add a few drops of different color to each. Paint on cooled, glazed cookies.
3. Allow to completely dry before storing.
