| Fig Bars 1 c butter2 c brown sugar, firmly packed3 eggs1 tsp vanilla1 tbsp lemon juice4 c sifted flour1 tsp salt1 tsp baking soda1 tsp baking powder1-1/2 c ground figs1 c water3/4 c sugar3 tbsp flour1/4 c chopped walnuts2 tbsp orange juice To make dough, cream butter and brown sugar.Add eggs, vanilla and lemon juice beatStir together 4 c flour, salt, baking soda and baking powderBlend into creamed mixtureChillMeanwhile, prepare fig fillingBoil figs in water 5 minutesBlend sugar and 3 tbsp flourStir into figsCook over low heat, stirring frequently, until thickStir in nuts and orange juiceCoolDivide chilled dough in halfRoll each half in a rectangle 18x12x1/8" on well floured pastry clothCut into four 3" wide stripsPut cooled filling down center of stripsUsing a spatula, fold dough over fillingCut strips in halfTransfer strips, seam side down, to ungreased baking sheetAbout 2" apartBake in 375F for about 15 minutesMakes about 5 dozen | |
