Fig Bars


1 c butter

2 c brown sugar, firmly packed

3 eggs

1 tsp vanilla

1 tbsp lemon juice

4 c sifted flour

1 tsp salt

1 tsp baking soda

1 tsp baking powder

1-1/2 c ground figs

1 c water

3/4 c sugar

3 tbsp flour

1/4 c chopped walnuts

2 tbsp orange juice



To make dough, cream butter and brown sugar.

Add eggs, vanilla and lemon juice beat

Stir together 4 c flour, salt, baking soda and baking powder

Blend into creamed mixture

Chill

Meanwhile, prepare fig filling

Boil figs in water 5 minutes

Blend sugar and 3 tbsp flour

Stir into figs

Cook over low heat, stirring frequently, until thick

Stir in nuts and orange juice

Cool

Divide chilled dough in half

Roll each half in a rectangle 18x12x1/8" on well floured pastry cloth

Cut into four 3" wide strips

Put cooled filling down center of strips

Using a spatula, fold dough over filling

Cut strips in half

Transfer strips, seam side down, to ungreased baking sheet

About 2" apart

Bake in 375F for about 15 minutes

Makes about 5 dozen
