| Crunchy Spiced Rum Balls 1/2 cup raisins, chopped fine1/4 cup spiced rum 1 cup confectioner’s sugar2 tbsp cocoa powder1 tsp cinnamon1/4 tsp nutmeg1/4 tsp salt1/4 cup granulated sugar3/4 cup cornflakes12 vanilla wafers3/4 cup whole almonds, toasted1/2 cup sweetened, shredded coconut2 tbsp light corn syrup Soak raisins and rum in small bowl until raisins plump, about 10 minutesWhisk confectioner’s sugar, cocoa powder, cinnamon, nutmeg, and salt in large bowl until combinedPlace granulated sugar in shallow dish Process cornflakes, vanilla wafers, almonds, and coconut in food processor to fine crumbs and add to confectioner’s sugar mixtureMix in corn syrup, plumped raisins, and rum until mixture looks wetShape mixture into 1 inch balls, roll in granulated sugar, transfer to large plate, and refrigerate until firm, about 1 hour(Rum balls can be refrigerated in airtight container for up to 1 week) | |
